easiest way to do it, is to have the plain textures, and take them out of the jar and into a zip file. Since I do not use standard, I havent had to do this so I may not be right. Im sure someone has the standard textures as a zip.
Anyway, once in the zip file, go to the misc folder, and all textures for the biome should be in there, have a muck around and experiment to see how it looks in Minecraft, you could make the grass pink if you really wanted!
Colors that are basically grey and white on the leaves, grass,(and maybe the melon/pumpkin stem, I am not sure) affect the colors of that. If you want to do whatever colors you want to make custom biomes, then
