What about just changing some ores to smoothstone, and make coal appear as diamonds, lava as obsidian (although you would have to deal with the lava particles problem by making them invisible or something)and, redstone as mossy cobblestone or something really hard to break with low level picks (obsidian would be too obvious, IMO)
