Recreation of Minecraft's old greyscale lightmap. It's not perfect since torch light is calculated a bit differently than it used to, but I made some tweaks to get it as close as I can. It also gets rid of light flickering. (This feature requires OptiFine or MCPatcher)
Skeletons have zombie arms again! Just like in alpha/beta. (This feature requires OptiFine)
Removed tintIndex from leaves block model so birch and spruce leaves are no longer tinted.
This one's a lot more basic than the rest, but I've added the cow and slime textures from early alpha (pre-Alpha 1.0.13).
The reason I didn't add the slime or cow textures is that the Alpha pack is meant to portray the last version of Minecraft before the Halloween update back in 2010; Minecraft Alpha 1.1.2

The main menu has a dirt-based backround like in alpha/beta but it's still 3D, there's no way to get back the old one? Even with MCpatcher?

The stars of the sky on night time were bigger on alpha/beta, so you could replace them.
Maybe? OptiFine allows resource packs to have custom skies. I'm not totally sure how it works, though.
Item names still look purple with round borders. In alpha/beta they were completely black, transparent and square, there's no way to re-texturize them? (fact: the Achievements list still uses the old ones).
Inventory tooltips do not use a texture. They are drawn entirely ingame, so you cannot change them with a resource pack, unfortunately.
You could remove the music of the main menu and creative mode, so there would be only the old music.
Talking about the music, on the alpha pack, you could replace the actual music for the alpha music (yes, the music in alpha was kinda different), but I don't know if it would be a copyright infraction.
I'd be wary of anything to do with Minecraft's music as that stuff is especially copyrighted.
And the last one, dropped items now look on 3D even with graphics on fast, so, there's no way to make them 2D again? Maybe with the magic of MCpatcher?
You can can make item models completely flat, but you can't disable their rotation, and you can't have them always face the player like they used to.
The rest of your suggestions seem easy enough, but it's up to 2XMM2 if he wants them added to the pack.
Tried importing your Alpha pack and noticed that it gave a few warnings. One being that you're not using a valid UUID for the pack_id. (This can be seen by going to Global Resources, tapping on the pack, and tapping on the warning sign that appears.) You should probably generate a UUID for the pack and use it, just in case it every becomes a required part of the format. Here's a good UUID generator that was mentioned by an article on minecraft.net:
EDIT: To be honest, I can't figure out at first glance what's wrong with the pack_id you're using in the Alpha pack. The Beta pack is definitely using an invalid one, though.
Your packs_version was also not SemVer compliant, according to the in-game pack validator. EDIT: Additionally, the packs_version field is intended for the MCPACK format version, not the version of the specific pack itself. (The current pack format version is 0.0.1, I believe.)
The same errors happened with the Beta pack, plus a syntax error. You should probably check your pack_manifest.json for errors/typos.
Also, while the main menu screen uses a flat dirt background, all the other menus do not. Also, the pause menu has this weird black thing instead of the Minecraft logo. Not sure if any of that can be fixed or not, but just thought I'd let you know in case you didn't already.
Also, I have some other suggestions for future versions of the MCPE port of this pack:
* Add in the Java edition rose bush & peony textures - MCPE has modified versions, and I think that since these packs are emulating the Alpha & Beta stages of JAVA Minecraft, then other textures should match that edition as well.
* mobs.json allows for changing geometry like you did with the zombie villager, so you could make pigs have flat snouts again through a simple model change & texture swap.

I had been playing around with the pack_manifest for a bit and i probably forgot to revert them.
But i seen alot of other packs with pack_id issue that they too can't understand, and the 0.17/1.0 beta builds changed the pack_manifest.json a few times, so i might make a new one from vanilla.
Also, while the main menu screen uses a flat dirt background, all the other menus do not. Also, the pause menu has this weird black thing instead of the Minecraft logo. Not sure if any of that can be fixed or not, but just thought I'd let you know in case you didn't already.

But the only issues with the pack i could not fix was the pig and chest textures. MCPE doesn't support transparency in certain textures. So i left them alone, i'm trying to figure out in the meantime how to fix this...

I'm mostly excited for the lightmap, good job! I've seen lightmaps before of "alpha/beta minecraft", but this looks great.
