Most of the art is going to be "ornamental" things that are supposed to supplement details of buildings. There will be a few paintings too, though.
What kind of alternatives are you thinking of? If you give some reference photos or drawings of what you want it to look like I can possibly do it...

It was mainly the crack pattern on the stone bricks.

Or maybe just something unpatterned. I know it's the Ornate pack, but something's got to be background to let other things stand out.
Leaves, hmm.... I just reopened 1.7.3 so I could look at them again and figure out what my problem with them is, which is that they look more like lace than leaves to me, and then spent twenty minutes or so looking through google images trying to find something that wouldn't look like lace when scaled down to Minecraft size. So far, this is the best I can find:

By the way I'm probably going to stop updating after this next one I think, and start a new pack with a similar theme but lower resolution.

It's going to be 64x only but will have the same amount of details. I'm going to offer different color/mood themes. One will be a "dark" but more traditional colored one, and one will be a dark natural brown one like it is now. And there might be another.
I might skip 1.8 and wait until 1.9 to release, depends on how long it takes to make new stuff.

Logs and planks

There is WAAAAAAYY too much grain in this pack. Normally you would only see something crappy like that in 128x packs. I reckon you used images off of google or something, thats why.

That's an improper and unnecessary accusation, to say the least. Quite frankly many texturers are
capable of making high resolution textures comparable to reality. And honestly, among the realistic
HD texture packs, this one definitely has less grain than many of the others. It is possible that your
monitor cant honestly handle the texture pack and brings out contrasting colors.
Look at LB Photo Realism, Great Pack, but veryyy grainy. Doesn't mean it's authentic though. Just
watch your choice of words. Really unnecessary where you were going with that comment...
Technically he has admitted to using Google images for some of his work. However it is quite possible to get photo-realistic textures that are drawn by hand. For example.
That was made from scratch in photoshop, no downloaded textures or images.
