Grass is the texture all the way in the upper right corner of the terrain.png, leaves are the other gray texture that's towards the top (the one on the left is for fancy graphics, and the one on the right is for fast graphics, and should be a non-transparent version of the fancy graphics one), and pine leaves are the other gray texture towards the bottom.
If you extract the minecraft.jar file, there should be a folder named 'misc'. Inside find the files: foliagecolor.png and grasscolor.png. These are where the colours come from. You can edit them if you wish, make sure to recompile in a .zip and patch them in with mcpatcher.

Keep in mind that using the texture pack selector won't allow you to change grass color, due to a bug. You have to copy the grass color thing into your minecraft.jar directly.
