does the customizer have the ability to select iron golem alternates? I love that original alt texture you did (the "headless" one) but I don't see the option on the site.
It's easy to do manually.
• open the standard Jolicraft pack and click on the mob folder
• scroll down to "villager_golem_alt.png" and drag that onto your desktop
• rename it "villager_golem.png"
• drag it into the mob folder of your custom pack

I agree the mod is pretty awesome!!! I also think you should make a completely different texture for the armor icon instead of just recoloring it.
