I started on this project last night, and it's coming along rather well. I'm around 50% done with terrain.png and also did some minor editing to particles.png. I am planning to have reskinned mobs and new items, redone to look like Super Meat Boy.
But what am I saying, have some screenshots instead!

All-new Dirt, Grass, and Sand textures
The dark wood texture (Along with the non-visible Birch wood) has been improved, and grass blocks with snow on them are now paler in comparison to regular grass. It'll probably be worked on, though.
Lo' and behold, the regular leaves have a brand new texture! No longer a jumble of random shades of color!

The GUI now has little Meat Boys as the icons for Health and Armor, there will be more GUI updates in the future.
There is also new Cobblestone, Wooden Planks, Lapis, and Glowstone. Perfect for any home interior!
Mossy Cobblestone is mostly the same, but Obsidian has now gotten a brand-new update!
TNT also looks new, no longer being Brownie bombs.
And now we go to some screenshots from the lovely SRB2.org server
New Iron, Diamond, and Gold blocks have been made in the style of some SMB textures from The Forest.

UPDATE 1 (Feb. 13, 2011): A significant portion of terrain.png has been finished.
UPDATE 2 (March 10, 2011): Well, it's been a while of on-and-off work, but I've finally gotten the entirety of Terrain.png finished. A few updates to already-existing textures, and a new logo for the pack.
UPDATE 3 (April 17, 2011) A rather large update, with some non-texture stuff done (GUI, ect.), a lovely new intro splash, and a chunk of terrain.png remade. Oh yeah, and new water/lava for all you curious people.
UPDATE 4 (May 23, 2011) The pack has been completely updated to the latest version (Just in time for 1.6, yeesh .-.). A small portion of the terrain.png has been completely remade, along with another portion being updated.
UPDATE 5 (May 24, 2011) Stone has been given a new texture, along with all the ores. Snow, the Iron door, and other textures have also been given a new texture. Also, some more GUI stuff has been completed, including the buttons and the block selection thing.

If so, what are your plans for the workbench, chests and furnace? I've thought about it, but theres nothing really meat boy-ish that seems to fit..

As mentioned, this uses Painterly textures and graphics as placeholders until I actually get them done.
No good food texture packs that my computer can handle, lol.
