Do you mean trees with multiple colors of leaves or trees scattered around with different colors for each tree? If it's the latter, I think there are different colors of leaves for every biome, and that there are normal leaves (for oak and birch) and pine needles (for pine trees).
@Above post.: I mean Multi colored tree leaves.(like yellow, Orange, Green, Dark green, Etc.) On one tree. It really looks nice in a lot of pictures i have seen and Vids. I just can't find a single Text pack that has em.

From what I can see there in the videos it's almost certainly due to the biome 'triangle' files 'foliagecolor.png' and 'grasscolor.png' files in the texture pack being used. the colours of foliage and grass in game act according to the colours on those triangles.
This is Notch's plan for how the grass biome triangle works ingame:
Here is the 'grass' biome triangle for my own texture pack:
And here is how it effects the grass colour ingame:
The same applies to colour in the tree foliage. Some texture packs just employ more extremes of colour in their biome triangles and that is what you are seeing in the video above.
Here's what the two biome color triangles do when combined with the 'Wild Grass' mod (notice the trees are different colours in the background) [click to zoom in]:

Well mine uses those triangles of course... as do many others, like John Smiths and Misa's. We just happen to have made ours a little more extreme than the standard biome triangles that come with vanilla Minecraft. If you like the colour of trees in one pack, but didn't like the rest of the textures, it's entirlely possible to just copy the triangle .png files from one and drop it into a pack that you do like (make sure you get things in the right place with the right name, and make back-ups of your saves and 'bin' folder before messing around). :smile.gif:

ps. The biome triangles are there in all packs. Some may have intentionally blanked them out to solve the problem of grass on the sides of blocks not being effected by biome colours, and consequently sticking out like a sore thumb. Notch has still to fix this. MrMessiah's 'Better Grass' mod somewhat fixes this by covering the sides of the grass block with the same grass that you get on top, I like this solution, but others don't. In amswer to your question, I guess you'll just have to look at sample pics on each texture pack you like the look of and if you don't see any examples, ask the owner if they've edited their biome triangles with richer colours to make the trees and grass more varied. I'm sure you'll find one you like, whether 16x16, 32x32 or 64x64 and up. :smile.gif:
I feel I should point out that the game still has the bug that prevents biome colors from being applied from texture packs. Unless you use a patcher or copy the grasscolor.png and foliagecolor.png files into the minecraft.jar by hand the biome color changes won't show up in the game. :/ (this bug also affects the watch dial)
For most packs, this isn't too much of a problem as the default biome colorations work with them, but for some (such as my Mooncraft pack) it's pretty bad. (The surface of the moon is NOT supposed to be green!)
