yeah, it would be a completely different game, but it would be fun to tun on the "epic graphics" switch once in a while just for fun. Oh well maybe some day :tongue.gif:
It's just a mock-up in a 3D rendering program. I don't think Minecraft can ever have lighting and bump mapping like that as long as its in Java, and even then, Notch wants the graphics to stay retro-styled.
There is a mod that adds some more advanced effects to the game. They are pretty sure HDR and other effects can be added, and he is currently finishing bump mapping, so have faith, Minecraft might have a pretty version!
I personaly can't STAND the realistic packs. They are terrible and make my eyes bleed. And if Minecraft looked like that, anyone's computer would explode. Sorry, but it's impossible to make it look that realistic, but the GLSL Shaders (Which is super CPU intensive) mod can make it look sorta like that.

EDIT: On a sidenote, what IS the highest resolution/most realistic texture pack so far?

All other 128x alter some textures dramatically, and personally, that ruins it for me. 128x is the highest so far, I think.
But I agree, it would be great playing with the textures in those fakes.
