You might want to look for an editor specifically made for editing enchantments. There's one called Eedit, but I don't know if it's still being maintained. Try searching for it, or look in the Substrate SDK topic for a link.
[Mac]
I constantly try and open the software as I need it to edit things for my Adventure Map! If you could help, that would be great! I have a Mac Version 10.6.8. I assume the software wouldn't work with any 10.6 versions, should I get some kind of software to help me open it, or possibly get the Windows/Linux? I don't have mono installed by the way.
I've received earlier confirmation that the Mac version does not work in 10.6. You should try downloading the Windows version, which you can run with Mono. You'll need to download the Mono runtime first if you don't have it already. It won't be as pretty, but the functionality is there if you can get it to run.
If you're unfamiliar with Mono, it's like downloading the Java runtime in order to run your Minecraft jar, but for .NET .exe files instead.
There's a conversation about this topic a few pages back. This is what I had to say on it:
Look at the NBT Schema for items (http://www.minecraft...ayer.dat_format), and you'll see that there's a "SkullOwner" tag you can put on the skull item, within its "Tag" node, and it should be a player's name. [...] Reopen the file in NBTExplorer and confirm that the changes you made actually saved.
I did some testing, I think the missing piece is you must set the "damage" value of the object to "3", which indicates it's a human head. Minecraft preserved the owner tag when I did that, but my player is the default skin so I don't actually know if it was honored.
There are several steps that must be followed for creating skulls. Missing any of them will cause Minecraft to just delete the item when you load your world. I'll bet that if you re-opened your player in NBTExplorer before loading Minecraft, you would find that your changes actually did save.
To launch on mac 10.6:
Download the Windows/Linux Version
Get the Mono runtime here (Preferably the stable version)
Install
Open Terminal (Applications>Utilities>Terminal)
Type "mono" and then a space in the window
Drag in the Windows/Linux Version of NBTExplorer
Hit Enter
Enjoy this awesome program!
Make sure to hit "Open" not "Open Folder" (Tends to work better for me)
I have a slight problem here; I attempted to use copy and paste to add tags to a squad of Zombie Pigmen that roam my "central plaza". I turned on Invulnerability, CanPickUpLoot, and attempted to add tags for CustomName and ShowCustomName. I then entered Minecraft, and found that the only functional property was invulnerability. I threw diamond tools at them for fifteen minutes and although CanPickUpLoot was set to 1, none of them ever picked up anything. Furthermore, upon reopening NBTExplorer, I found that the additional tags (CustomName and ShowCustomName) had been deleted.
Any advice?
Check that the changes were saved before opening Minecraft. I suspect that they were, and that Minecraft is not honoring the changes (either because it simply doesn't honor them for that mob, or because some other required change is missing). Minecraft's reaction to data it doesn't like is to delete it.
For this I'll have to defer you to the wiki or forums to find more information on that exact tag. It's also helpful to find another mob that already has it set, and then compare the two.
Great program, but I'm having trouble finding ways to do a few things. There aren't any tutorials online.
1) How do you make a mob spawner spawn angered (normal) zombies that already know where you are and will endlessly pursue you,
2) How do you make a building indesctructable so players can use TNT and kill creepers in an adventure map without escaping,
3) How do you make other mobs (besides zombies) a baby and how can you add potion effects onto them.
I would greatly appreciate it if someone can answer these questions for me, they are going into my adventure map.
1. Is this even possible? I don't see any data that suggests you could do that, or that mob aggression is actually saved.
2. I also don't know that this is possible without mods. There is the mobGriefing game rule that you could turn off to prevent creepers from destroying your world, but I don't know anything that would apply to TNT.
I downloaded this to edit a villagers trade offers and I watched a couple of tutorials but they were all in windows and I have no idea where the "search"option is on the mac version. Can any one help me?

Look in Edit->Find (Or use shortcut Command-F). I think all of that is standard Mac convention, which I tried to stick with for the Mac version.
By the way, if you've made it that far with the Mac version, would you mind telling me what version of OS X you use, and whether you have the Mono runtime installed separately or not (if you know)?
I have a Mac (got it in 2010), and when I tried to open level.dat it just force quit. What do i need to do in order to actually use the tool?
What version of OS X is that? If it's 10.6, then NBTExplorer is confirmed to -NOT- work on 10.6. Maybe some day a Mac programmer can help me figure out why. Also I have no confirmation either way for 10.7.
If the Mac version is not working, you should install the Mono runtime for OS X, and then download the Windows/Linux version. I'm going to quote some nice instructions from thhinds a few posts up:

Thanks. Whenever i search the region folder I just get a blank window that says searching. Is it because what I searched had no matches or is it something else?
Btw I'm running 10.8.2 (Mountain Lion) and I do not have the Mono runtime installed at all.
*Edit: It actually did work. It just took a long time to search.
Searching regions can be very slow because every single piece of data in your world folder pretty much needs to be inspected. If that you're looking for doesn't exist, you'll go through all of the data to find out. I should be less lazy and periodically update the search window with something. But it's still better than freezing up the UI, which is what it used to do.
If you think you know what region it's in, you could select that region before doing your search to limit scope.
And thanks for the information. I've been trying for months to get confirmation from anyone that this works.

Or try looking at some youtube guides: http://www.youtube.com/results?search_query=nbtexplorer enchantments&oq=nbtexplorer &gs_l=youtube.3.1.35i39l2j0l2.728.1962.0.3994.12.12.0.0.0.0.95.737.12.12.0...0.0...1ac.1.knrwo2d9lHM
Any guide using NBTedit or NBTExplorer should be sufficient to show you what to do -- they both work on the same principle.

3. I think zombies are the only ones, and it's tied in with their zombie villager state. As for potion effects, mobs have an ActiveEffects property you could use: http://www.minecraftwiki.net/wiki/Chunk_format#Mobs, with corresponding status effects: http://www.minecraftwiki.net/wiki/Potion_effects
In general, it feels like you're going to need mobs to achieve what you want.
