When I open the .zip and try to click both the .jar and .bat they just open up in another zip folder or notepad.
When I can extract them and try to run them, cmd prompt just says either '.jar not found' or 'access is denied'...
You need to extract the contents of the zip before trying to run the jar or bat files. If it's still not working after extraction, you probably need to install Java 7.
The resource pack chooser is looking for the top level folder of your resource pack (not the zip file). You can only choose folders with it. This is because in order to use a resource pack with Minecraft, you have to extract it into your resource packs folder. This way, you can select a resource pack straight out of the Minecraft resource pack folder. Also you can change one image and reload your resource pack without having to re-zip it.

Is there any chance to download a previous version of Spritecraft?
The pack I always used hasn't been updated yet and I would love to be able to simply add the old terrain.png.

Go into downloads select spritecraft.zip then click the Jar file Spritecraft and a window will open.

Arvixe migrated the files to some other server and screwed it up. It's fixed now.
