This is not intended to be better than any other inventory editor. It is simply a basic editor designed to only be used in scenarios where other editors do not work.
Ultimate Inventory is a bare-bones inventory editor for all platforms. It is essentially just a GUI for editing the raw values of a .DAT file. It has no list of items, like some other editors, and the way to use it isn't necessarily as convenient as other editors. Why use it then? See for yourself:

When colored wool/dyes came out, no inventory editors worked with them. And since they utilized damage as the color, you couldn't get them with /give, either. With this, you could.
To find a list of values to use with this app, use the Data values page on the wiki.
This app also works with servers if you are the owner of the server. Just edit the .dat files inside the world/players folder.
Yes, it's for Mac, and yes, I know it's not useful right now. But when a new item comes out and none of the other editors support it, this one will work just fine.
Also, I'm going to port it to Windows, just not yet.
Plus, I'm going to eventually release it as open source, once I clean up the code, so then it'll have more of a purpose.

The download link gives me a 403 error and the 403 page suggests that I log in. ...which requires me to register.
When I do, the website asks me to download some "Dropbox" application, which is not the application I was expecting, so I haven't installed it. Perhaps you accidentally provided a download link that only works for you, personally?
I just went on a long journey to uncharted lands so that my world would generate some lapis. After getting a good amount I headed back, but died in lava!!!!! "Inside Job" doesn't have lapis, so I wanted to try this app that sounds awesome, but I too get the 403 error. :-(
I thought maybe I had to have a dropbox account, so I did that and still nothing. I did however manage to get a christmas video from my iPhone to my Mac using dropbox, so that's awesome! Thanks for sharing that kool site with us! And I hope you can fix the 403 error.

Just so that you're aware, on a Macintosh, the new editor is altering the savefiles in some way such that Minecraft fails to recognize it as a Minecraft saved world, anymore. That is, using Ultimate Inventory makes a world completely unusable.
...which is unfortunate, because it's making the "Slimes spawn on peaceful in Singleplayer" theory very hard to test for myself.

No, NBTedit is more powerful than this.
Plus, you can use NBTedit and INVedit with mono.
Even if I can't use this, it looks alright.

Or, you can get 1 of those items in your inventory to find out the ID.
