What about Baba Yaga the witch? It is very popular in the Russian folklore. Usually, she flies in a mortar with a pestle as a weapon in her hand. Also she has got her own spooky house, which can travel on its chicken legs (a house with legs). I think she would be a nice elemental witch (maybe a witch of the forest spirit?). That's just an idea

Also for some element brainstorming: hell, end/void, iron, magic, poison, blood, sound, etheral/ghost, internet, emotion, unstable chemistry, scent, movement, strenght, psychic, x-ray, atomic, ink, madness, party, time/age, redstone. you can try using the latest version of forge but i am working on a fix for this currently..

its ok i figured it out,it was one of minecrafts file that got corrupted,i had to delete ma entire minecraft lol but now its working fine again xD

An evil vampiric, UNDEAD witch.
1.-It can fly, and shoot "Evil Skulls", that catch you on fire, and zombify mobs! (Don't worry, they'll just turn into a zombie )
2-Summons minions,Skelleys bats,Zombies,and Witches
3-Can Leech health, and heals itself.
4-ONLY spawns in the Nether and End.
5-200 HP (Yeah, a boss )
6-Only spawns in the undead fortress. ( Center of Nether fortress/obsidian pillar)
7-For a finishing move,Turns EVERYTHING nearby into zombies,Explodes, and zaps you into a Crater.
8-Has an undead,Zombielike,Texture, with a black robe, red particles, and large black wings
Sound cool? If not...
Beast witch
1-summons mobs in heavy Multitude. look OUT!
2-Shoots out fire, Ghast, and slime balls.
3-Summons protective bubble at half health.
4-80 hp
5-Spawns in Swampy Beast Homes.
6-Wears animal skins, and uses a bone sword when near the player!
7-For a finishing move,Summons A TON OF MOBS. I mean a ton.

2-Bonemeals EVERYTHING!
3-Summons Ents! (Living trees)
4-For a finishing move, Heals to full! This can only be done once...
5-Kind of a weak witch, But still a cool one!
6-Shoots leaves! (Like the Pokemon Razorleaf attack!)
Ice/Water witch Duo!
1-Two half sized witches
2-One shoots out Ice! The other Shoots water blasts!
3-Flys by Freezing a Quick-place water/ice platform.
4-Summons Ice golems and Ummmm.... Squids!
5-Each have 50 Hp, and when 10 is reached, the Ice witch,Puts ice everywhere, AND Spawns TONS of Ice golems. The Water witch Surronds Nearby mobs with water, and Turns Everything into squids!
If you like any of the 3, or the 2(Duo)
Buildable with Endstone, and a Nether star!

Halloween and Christmas witch are added because they are there to celebrate those occasions and yes, they are no where near "Elemental".
