Minecraft and No Man's Sky are definitely NOT infinite.
No mans sky is almost 1000000 times bigger than the minecraft map, having almost 18 quintillion planets (yes. QUINTILLION).
A mod of this size would require a monster graphics card and would take a very very vey very long time to make.
(The only reason that No mans sky can run on PC's is because its divided into chunks like minecraft, however, even with these chunks, the mod would still be huge and would crash minecraft.)
I do believe that is why OP put quotes around infinite, XxWolfCrusherxX.
Anyway, while a no-mans sky mod would be pretty cool sounding, (At least to me, and apparently you,) I doubt anyone really would want to, considering the negative controversy behind the game.

Good news! My team QwertCraft have been doing some research and we have figured out that it isn't impossible.
During our researches, we came across Galacticraft mod and if you don't know all ready, they use a dimensional gateway to each world, so if you would be alright with having a transmission with flying to space, and having only maybe 10-100 planets, then YES! It is possible!
If you would like a mod like this, it would take a lot of effort to make random generated space areas that need to link to planets and there looks so, that's a lot of pixel art to do. Plus, need to make all the functions of 'once I go this high' or 'once I go this low'. So with maybe a year or so of work, it could be done.
Now some of you will be saying that No Man's Sky is a bad game and I will partially agree with you.
I have been waiting for a mod like it and I think it would fit well in minecraft.
I would be a hard mod to make seeing as it would need some form of space exploration.
Now No Man's Sky is a "Infinite" Universe same thing with Minecraft.
Minecraft is Randomly Generated once again same with No Man's Sky
I just Think it would fit very well into Minecraft and am surprised No one has even attempted it ( or at least that I know of.)
