in swamp biomes and in certain rivers and lakes there should be alligators and you would have to skin them with the knifes to produce alligator meat and alligator skin which should be craft table into gator Armour. p.s., the gators should be hostile.
also to help stop poaching, you could have hunter permits that must be crafted and are required to be given to villagers when trading animal skins or meat to the villagers. the player would put the permit in the crafting table with the animal product being sold and would give the player the permitted variation of the animal product. the villager would then give the player the permit and emeralds.
in villages, there could be fish markets where players would drop off permitted fish and crab.
fishing boats would have nets that would collect fish and players would open the boats inventory to find fish.
crab fishing boats would have cages that must be lowered to the sea floor by the player pressing a key then the lobsters or crab can enter the boats inventory.
permits will only allow a certain amount of animals being hunted untill they are upgraded.

I really find these types of mod sort of.. Unrealistic. It's essentially the same pattern: Great mod idea, perfect mapping out, but the mods just can't seem to give Minecraft the "realism" effect that they describe. The game is just too rugged and blocky for perfect realism. While I genuine feel like this mod can be something great, there will have to be a lot of aspects involved to make it feel realistic. Perhaps, a detection aspect while crouching near any mob? To signal to the player whether or not the mob can see them, and at what level they can detect them. Maybe a sort of side leaning mechanism? To make shooting without having to walk into the open a lot easier. These are just suggestions, of course. I wish you well no matter what the end outcome of this is. Good luck!
In this mod hunting will be more important and harder to do.
In the vanilla minecraft you would only have to go out for 4 seconds and kill some cows, this
mod will make food a real problem. You can't go on for 3 days not eating!
