One of my ideas for my server as the new admin was to create dungeons which players can try to navigate through in order to get to some sort of prize at the end.
I know this is probably an unreasonable request, but I thought I'd ask just in case: Is there a mod that would allow me to watch the players as they progress through the dungeon rooms, without me physically being there? That is, a mod that offers some sort of security camera that I can place in various areas and switch my view to?

Question: Will it work in multiplayer, and if so, will every player have to install it in order to be able to join the server?

Not sure... just check it and you will see. Unfortunatelly it is just for version 1.1. Maybe you could contact author and ask him for source code, so you can update it and make it for MP.
