This sounds like a great mod, i've got some decent skills at texturing/art but i'm new to propper modding and can't do much besides add a grass block that moves and crashes the game, if you want PM me about texturing/art/sig banner (and concept if you want to go that deep with this project/idea) and i could help

i like some of your ideas and some not so much but i agree that the caves can get boring need more stuff in them!

if your still taking suggestions we already have pigmen so why not mole men?
my idea is a bit complex on the ai side of things trying to make them more like npc versions of the player than mobs.
basic moleman has a dimond pick and the unique ability to break everything execpt bedrock with one strike. (pick is not dropped ondeath)
also has a mining helmet with a light on it. (not Dropped)
they drop some diamonds and gold on death.
but basicly they are friendly mobs (4 damage per hit if provoked tho) however they will have a base of operations as well as dig tunnels out from said base at random. conflicts between molemen and players could arise when said moleman breaks through into your house with an army of creepers behind it lol. otherwise interaction with a player is simmilar to a tame wolf minus the following aspect the moleman will engage zombies and skeletons on sight but it will ignore and be ignored by creepers. they will also build simple homes for themselves nothing complex just a small one room house with a bed window and torch or two.
maby make their house have a special mob spawner that regenerates a despawned moleman when the player returns to a inactive chunk.
but basically make them very rare but helpfull spawns.

A Cave dweller. Blind monsters that eat all mobs except creepers. they cannot see, but are attracted to footsteps and mob noises. Cave dwellers burn in sunlight.

I'm sorry but I really kind of dislike the idea of having demons/satan in Minecraft. It just doesn't fit well.
I'm not Christian, I'm an Atheist. But really, those just don't fit in Minecraft. I think there should be creatures like..
Imagine a slime.. But a wild version of it, where it is like a long rectangular green slime but it has sharp teeth and it's mouth open. It will eat stone and carve out it's own caves but when it touches sunlight, it will burn to death and when it touches water, it will grow and eat more than 1 stone block at a time. In this pattern:
Normal sized wild slimes eating pattern:

Medium sized wild slimes eating pattern:

[] []
Large sized wild slimes eating pattern:
[] []
[] []
So yeah that's how it eats depending on what size the wild slime is.
The wild slime will ALWAYS (regardless of size) emit a light level of 4.
The will have jig-jagged teeth with a dark dark green inside, yellow glowing eyes, and a few dark green lines on it's top back to make it look more like a worm. It will have the slime transparency and color.
Lastly, the wild slime could be about 3 blocks long with a flat face and 1 block wide.
Example of a wild slime.

And their damage done to you should be:
Normal size: Half heart.
Medium size: 1 heart.
Large size: 2 hearts.
Texture for a Wild-slime. Use it on your skin model guy.
I only did the head, to show you what the face and top-back would look like. It looks all glowy and stuff. I couldn't make it transparent though, no clue how. Lol..
