So here is what my reasoning is behind this is: I want to relive the classic Xbox 360 Minecraft days again but without buying an entire Xbox 360 and getting Minecraft on there. I want to know what set(s) of mods are available to recreate this experience on PC. What my ultimate outcome is in my head is the classic crafting table look and functionality. Any help is appreciated!

Besides mods that go for the Minecraft Alpha/Beta look of course.
Otherwise playing the Xbox 360 or whatever other legacy console version is the way to go. I got a few Legacy Console versions for a few consoles just encase I want to experience that version of the game but still enjoy Java Edition more because of mods.

There is some console UI/GUI mods you can try.
There is console experience (a mod for 1.9.4 to 1.16.5 for Forge or 1.14.4 for Fabric (wasn't updated very much) whichever you choose to use).
It has the enchanted items text above the hotbar,
-the paper doll in the corner of the screen when your sneaking/swimming/sprinting,
-the loading screen (looks more like Bedrock though I think)
-among other details like animations or firework details for example

Otherwise there is resource packs for Bedrock style GUIs but don't think so for legacy console
