I find myself getting Netherite and fighting the ender dragon, thus the game too fast way too often. What are some mods to make the game last longer? It could be literally making the game longer, more items and structures, stuff like that.
Or how about a mod that actively makes the game harder the more you progress (perhaps a mod that starts the difficulty from Easy to Normal to Hard to Very Hard, etc.), as well as a mod that blocks items from being obtained until you get the correct item before it, in a chain, thus making the game harder and longer.
Also, about the Simple Achievements mod, is the Achievement Book the mod comes with automatically created with preset Achievements and goals, or do I have to make the goals myself? On top of that, is there a mod that adds quests to the game?
No clue what versions of mods your after. Assuming 1.7.10 or 1.12.2, maybe 1.18.2. No clue, need more info but just going to put my 2 cents of types of mods and you can search for whatever in that area/some of the names.
Technically most heavy content mods can but I'd say ones that extend survival (TSON Craft 5, not 4 and under as has tech elements), Environmine, etc. are a good idea for a challenge. I forget the others off the top of my head. Either way they make tools/recipes and early game more longer and interesting.
Some like Enviromine have thirst bars, stamina, heat and so on to consider. I usually go for the thirst or stamina ones myself anything more annoys me. That or I go with a hunger removal mod and go with just health as using food for health only while tough and old school Minecraft I do prefer sometimes over the hunger bar.
Curseforge/Modrinth have many mods and just go by their categories/filters to find some and whatever version your targeting.
Achievements ones for sure.
If into tech/magic than sure the obvious ones or if not interested in those some of the lesser known ones do similar but different content/a spin on things (so instead of Thermal Expansion, Mekanism, Industrial Craft more Omega Craft (tech), Lord Craft (magic), LightningCraft (tech/tools), Planttech (tech).
Or tool/armour/rpg mods like Divine RPG/Never Mine/Eternal Isles, dimension mods that allow you to create dimension/already have a dimension similar to the Nether/End with a spin on it.
That or a mod that changes recipes/changing recipes yourself with CraftTweaker. Or if configs the mod has allows for a hard recipes than the easy recipes.

Forget if there is a others that do it on newer Forge but yeah I agree it offers a lot for a tech mod/expanding on what IC2 didn't do.
Tech Reborn is a wonderful mod too, I added it into the little Fabric modpack I made for myself and it was pretty fun, I stopped playing that modpack when my world became corrupted though.
Modern Industrialisation caught my eye when I saw it, although I dreaded the amount of re-texturing I would have to do (I am not really the biggest fan of recent GregTech's textures, no offense meant to the creators of the textures though, just personal preference) and thus I did not add it!
We use Pyrolusite's Minimalistic Technology for re-texturing GregTech Community Edition in our v1.12.2 family modpack, it was not a complete re-texture so I had to make some textures of my own to fill the gaps, it meshes really well with the new JAPPA style of textures!
How about a mod that have a new mod what the mob can do: 1. hunt the player 2.leaves traps that the player can't see but the only see small footprints 3.teleport leaving behind 8 TNT after teleporting when near death 4
do high damage when near death 5. Would give the player fright (a new effect) which causes slowness 6. Can summon random mobs which it can controll and last 7. Causes an huge explosion while dieing that destroys anything around even killing the player if they are not holding up a shield. Also the mob would look like an black void figure

Better than Wolves will definitely make the game more difficult and longer.
