There's this mod I used to have which added a lot of stuff and now I'm trying to remember what it's called. I'll list everything I can remember below

cow armor, infantry armor, musket, blunderbuss, full armor (covers arms), shields (made from different types of materials)

Sounds like content from a mix of mods. My guess is either OreSpawn or a mix of mods that add animal armour, flan's or some other gun/military mods and shield mods I assume Mine and Battlegear or Spartan Shields.

By the sounds of it you either came across a mod, multiple or a modpack, is what it seems like.

Been a while since I've used any of them so I'm just guessing based on what I remember.
