I just installed Optifine 1.12.2 with Forge. Now, when I go into video settings, everything says of.option? This makes it nearly impossible to use and I need a fix. I will provide a picture.
Can you please explain better? I dont understand and this is my last hope for fixing this stupid glitch
The method described by iglooghost will not work - the launcher will simply redownload a clean jar file as you aren't supposed to directly modify any of Mojang's files (older "jar" mods have to make special changes to circumvent this. Optifine is contained in a separate jar file, either as a library which is listed in the version json, same for Forge or other modloaders, or in the mods folder (the latter is how it should be used with Forge, which loads it as a normal mod). If I had to guess you are using a different language and Optifine only has a lang file for "en_us" (older versions, like for 1.6.4, didn't even have one, they just hardcoded the option names in). The Optifine jar file should have the aforementioned folder path (you must open it with a zip utility like WinRar or 7-zip; there should be no issues in modifying its jar, but I feel like this won't work because Optifine should already have these files and if not sp614x would have released a fix if they accidentally omitted it (for this reason you should always use the latest stable release for any mod). You could try asking sp614x or the Optifine community for help (links in the Optifine thread).

I don't know what the internal structure is like for newer versions of Optifine but it is probably similar to that for 1.6.4, which contains an "assets" folder, which then contains a folder named "optifine" (the full path is "OptiFine_1.6.4_HD_U_D1.jar\assets\minecraft\optifine". If it is not here you should be able to find an "optifine" folder by looking around. Note that there are actually two such folders in the 1.6.4 version, the other being in the root of the jar and containing the installer itself, which is pretty obvious from the names of the files it contains; the other one only contains a file named "template.natural.properties" but I assume it contains more files, including language files, in later versions).
In any case, as mentioned before Optifine should already have the necessary language files (I do not see any other reports of this issue, which would certainly be fixed very quickly if so) so I'm thinking it is an issue with using it with Forge and/or another mod (many mods do have issues with Optifine because of the way it changes rendering - I myself have even made the decision to completely drop support for it and instead code in my own Optifine-like features so I can take full control over the rendering code). Also, if it is due to using a different language (one that isn't listed here) the only way to fix it is to use one of those languages, or possibly copy and rename one of the files (though Optifine should be falling back to a default, much as the game does with resource packs so you only need to include whatever you are changing).

Ive tried using it individually but it still didnt work anyway my language is English (US) when I use it individually it says this Error: java.lang.NoSuchFieldError: field_191308_b know anything about that? Also I can only see natural.properties i dont have a "template.natural.properties"

This is most likely an incompatibility with Optifine and Forge and/or another mod, especially given that I found an issue on Optifine's GitHub when I searched for the error you got ("java.lang.NoSuchFieldError: field_191308_b"):
As mentioned before, you should ask sp614x or get help on the Optifine Discord as I have next to no experience with Optifine and Forge, much less newer versions:
Also, if you are asking for help here it is be better to mention issues in the Support section or the aforementioned thread as it is more likely to be noticed (the Optifine thread is more or less dead as everybody now uses Reddit or Discord):

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?
Ok I open it with WinRAR what do i do next?
