So I'm standing at the starting line here, wondering where to go.

I've successfully set up a Forge 1.12 SDK for IntelliJ IDEA. Past here though I really have zero idea of where to go. I intend on creating a simple mod to start: a musket kinda like the one from Balkon's Weapons, and a Villager profession to tote it around and shoot at hostile mobs within village limits.
Where should I go to start creating such a mod? Any good tutorials on working with IntelliJ for Minecraft development? If it helps, I have this plugin installed for development.
The most important thing is to have modest goals at first. Just creating a custom block requires figuring out how to manage proxy, do registration, create assets and blockstate files.
I suggest things in the following order (roughly):
Simple block.
Simple item that does something simple when it interacts with blocks.
Create some recipes involving your custom stuff from 1 and 2.
Simple entity that has a little bit of custom AI and model animation.
More complicated block with a tile entity, with simple animation. e.g. a block that damages entities that get too close.
A container block with a GUI that does something. e.g. a machine that will compact powder (sand into sandstone, redstone dust into redstone ore).
More complicated item like a weapon or tool, with usage animation.
There are lots of other aspects of the game to explore as well such potions and enchantments, armor, biomes/world generation, structures, commands. The main thing is to start simple and build up.
