The update on EnviroMine is kind of stuck at the moment with a bug that no-one can seem to solve let alone find. Until that get's resolve we can't very much with development which has really bummed me out lately considering I had a Halloween event programmed in too.
I've also been working on a new mini-mod request for a Twitch streamer SiylissTV for his Sub Server.
To top off the workload I've just started up my 4th term of studies and have been handed two games projects, and three 3D animation/rigging assignments.
I haven't forgotten about the mod, the update or bug fixes... just have a lot on my plate at the moment so bear with me.

Although yes I agree it isn't for beginner Minecraft players, we never intended to make it for noobish players. The idea was to make Minecraft have a more realistic challenge and so far I think we have achieved that goal. Thanks for the feedback

This should work fine. Minecraft has temperature, rainfall and water colour values associated with biomes for things like weather and melting snow/ice, Forge also has a Biome Dictionary containing some basic types that are also used to give them further detail. EnviroMine makes use of these values to determine what effects the biome has on the player and the water quality.
So basically the only way to survive is go to a forest biome,gather up some animals,make an infinite water source,build a house and farm and cover it with torches,leaves and obsidian?
Except that the torches will gladly overheat you. There's plenty of ways to survive, though. You just have to be creative about it.
Should do something similar to what BTW does to water buckets (removes the ability to make water source blocks with them). This will force people to be a bit more creative when making their farms.

The reason BTW can do this is because they have their whole mechanical system to manipulate water without the need of buckets. We don't have that capability and therefore we probably won't do this.
Got a huge question.. Is there anyway to make it so that when you fill up a water bottle you use up the water source block. I know normally this wouldnt have any effect on normal play but its a feature that could be helpful for some modpack creators that might have a bit of an issue balancing some things with water quality. Like for example in the pack im planning out there wont be such a thing as infinite water so players would need to use the water around them very carefully but since water bottles dont pick up the source block its the same as if there was infinite water. So if there is anyway this could be a feature or if someone knows a way for me to do this i would be greatly greatly appreciative.

A stop-gap (though exploitable) would be to put water into a cauldron or other container (I believe Ex Nihilo barrels fill 3 bottles per bucket) and have it get used up that way. I think the big reason they don't do this, yet, is because it'd be unbalanced for a bottle to pick up a whole sourceblock when a bottle only holds 1/3 a bucket of water.
yeah but it still makes it to easy if anyone has 1 water source block the whole thing becomes instantly easier then if your water is truly limited which is what im going for. and it wouldnt really be unbalanced because a bottle holds 1000ml of water according to most mods which is the same as a bucket of water so it really depends on how you play. If you make a pack that uses that option then the person making that pack would balance it in a way that would work.

Crash Landing had a pretty good solution to this problem however it would only work on custom maps. Instead of trying to remove the unlimited nature of source blocks, you'd set the biome to something that would make the quality unsuitable for drinking and remove the smelting recipe for distilling it. That way you can't use source blocks and must use something more limited.

Not by default. You can change pretty much everything in the configs.

Just to clarify there is no release version with these configs yet. GenDeathrow has them on the BU branch but not in release.

You could lay out some ice and snow blocks and then build a shade over the top.
