Personally, I imagine they would do things to protect nature. I imagine them (if they were real, of course) to make little traps and find ways to disable or destroy unnatural, unholy beings such as zombies or skeletons. Perhaps you could implement some of this in their code, if possible- I would love to see several grove sprites work together to cocoon a zombie in a bundle of leaves.
And while I understand that the Quintessential Creatures should be advanced, don't feel that every mob has to have several purposes. For example, what is the purpose of the default zombie? To attack the player, and nothing more. I like the idea of a massive tree- why not make an entity that quickly morphs into one of those, working around the custom block problem? A grove sprite could have a rare chance of planting or dropping a huge sapling, which, when right-clicked on grass, would instantly grow over time a big tree.
Why are the zombies and skeletons the evil ones? As far as i can tell, they aren't the ones that destroy the land, kill the creatures and burn trees... as far as i'm concerned, we're the evil ones!

They are undead humans, and are not a natural part of the environment.
and maybe you should make more that represent different kinds of plants, like flowers (would require implementing seeds) and mushrooms and reeds (which regrow, and mushrooms spread slowly in 1.6, so they'll just knock logs and flowers out)

These are the most sensible, well implemented and cute mobs I've ever seen (including vanilla's wolves), my congratulations. Since we all agree that iron/gold blocks don't fit the theme, may I suggest to make them drop apples instead? They are rare and useful (but not too much without gold), and represent well enough the idea of a "gift from the forest".
This is adorable, would these function on Multi if installed on a server? Also, I agree that metal shouldn't be used by the sprites, ruins the whole idea of forest sprites. However why not create a completely different kind of sprite for it? Like a fairy or a dwarf? (Which I think would be really awesome.)

yes you can spawn them with SSP Commands. you type in spawn grovesprite, and it will randomly choose a sprite to spawn
