To suspend the sand like we do in EC2 and 3 you HAVE to use MCEdit.
Basically, the sand you place in MCEdit will "hover" until something changes any of the blocks adjacent to it (like a nearby circuit flipping, a block being added/destroyed, etc).

Yes, that is an entirely possible and valid way to do it (and the ONLY way to do it in the vanilla game). However, to do the complex effects we use in EC3, it is simply not feasible. For instance, in the "sand tower room" the entire floor needs to drop several times. As-is, the room had to be 70-80 blocks tall to get the effect to work (using the MCEdit method). Accomplishing the same thing via the method you describe (which would require 3 different pyramids of sand, linked to a common torch at the bottom and destroyed by water) would require a tower much taller than the 128 block limit.
Manipulating sand makes for a great effect, but it is VERY complex - I wouldn't recommend it to novice map-makers.

Im trying to make my own Escape map and all was going good until Escapecraft3 completely trumped my ideas. The 3 stage falling sand room was amazing. I cant find any Youtube tuts. Can someone help me with this?
This is so fun and the challenges were pretty creative.
However, there are a few problems... (spoiler)
1.) With the 1.2 update, it is easy to identify ovens from regular stone. I am not sure if this is the case for dispensers though.
2.)In the flooded elevator shaft, someone can easily make a redstone torch an place it in front of the door and leave the room before the water removes the torch.
3.)In the brain room, the "In case of an Emergency brake glass signs are misleading. I thought I was allowed to brake the glass to leave the room : P
4.) When a player gets to the roofs, if they saved their diamond armor from the maze area they can jump off the roof (or accidentally fall off like me) and live.
Other than that, it is very fun. I am going to download the rest not. And I apologize for any unwanted bumping to this thread.

Basically, you open minecraft, click "Mods and Textures" -> Open Mods and Textures Folder. Then go up one folder. Open the saves folder. Drop the map in the save folder and then unzip.
Ad links (and even selling mods) are permitted under the TOS to the best of my knowledge. The ad site I use gives an average of $2.50 per impression.

After I'd completed it I thought I would go hunt for the secret ending using INVedit
I had no luck following your redstone track
Then I noticed
What the door frame was made out of
I was thinking "OMG THAT'S GENIUS"
Until I checked, that wasn't it either
So either that wasn't what you were meant to do or it didn't work properly, because other than that I couldn't find another exit
But if that wasn't what it was meant to be, it's a good idea for V3, if you make one

Are you running any mods or mod loaders?
Try a fresh install by:
1) Find your ".bin" folder
2) Rename it something else
3) Run Minecraft (it will download a fresh install of the .bin folder)
4) Load the game
