I'm tempted to make a "hardcore" version, where any skipped nights reset you to 0, making it harder for people to save up. I've been playing multiple test worlds, and it is really too easy to get to, say, exhaustion -12 and then you have 7 nights where you don't need to sleep!
I also just did some more testing and found that the system behaves VERY weirdly while you're in the nether/the end. D: This may be less of a "here throw this in your survival world" and more of a tool for map-makers.
Next, set up an elevator like this. I'll post a MCEdit schematic at the bottom of this post.
The comparator that extends off the hopper powers a command block running the command /scoreboard players add Rounds showRounds 1
This will add 1 Round to the scoreboard. I'd also suggest making another command block off the hopper run the command /say A new round has begun! to inform the player of a new round.
Set that up, link it to your map circuitry and enjoy!

And, with all this in mind, I spent a lot of time (5 hours) building my next custom map thats coming out, which should be out very shortly! It contains the "Rounds" system, selectable classes, buyable items, a "Slaughter House" machine (which is kinda like the Pack-A-Punch in COD), and also a Bonuses room where you can purchase items. If you guys like maps that are like this, why not give it a go? My first map EVER can be found here, which is also based of the same genre.. Although the mechanics aren't as good and it looks quite ugly..

The Experience Shop idea is really interesting. I'm currently working on a map that needs a system like that, I was toying around with commands and hadn't figured anything out. Might give this a try instead of going on a 'trust' system. Could you just use Exp points instead of an entire level though? I assume it's possible if you replace lm with xp, but I could be mistaken.

This command works in chat, but I've never tried in a command block. I'd assume it does.
mickey, this is quite a useful idea! This would improve mini-game survival maps, as adventure mode still allows you to break torches.
Also, instead of using an endless repeater clock, use hoppers facing into each other. Have a comparator coming off one that runs that command. This will reduce lag A LOT as the game does not have to produce all the lighting effects.

2. Detect if a player has a certain item and swapping it for another
3. Give the player health
I know for certain that #1 is possible, but I don't know how to do it. I'm not sure if #2 or #3 is possible, though :/
And for the map I'm making, XP isn't used in shops.

These two things can't be done with vanilla MC -- you'll need to find a mod-maker for that.

No, sadly this isn't possible. The command block will either clear every type of that item, or it will clear none. There is no way to choose how many.
And before any of you say the command /clear @p 371 0 5 works, you're wrong. It clears all of that item.
