Great news! I've figured out how to use NBTedit and NBTexplorer (whichever you prefer) to add custom item attributes to minecraft items (for once I feel I've accomplished something)! My computer cannot run MCedit with greater than .5 FPS, so I went messing around with NBTexplorer! Try this method in NBTedit/NBTexplorer
instructions:
1. Put one item in your inventory (in minecraft).
2. Download nbtedit or nbtexplorer
3. Download my template
4. Open 2 windows of NBTedit/NBTexplorer
5. Open the level.dat file of your world and my template in the two NBTedit/NBTexplorer windows
6. Copy the "tag" files in any compound of my template
7. Open Data(compound)>Player(compound)>inventory(list)
8. Paste the tag file in one of the items in your inventory
9. Edit the amount value
10. Save and enjoy.

The result should be:
Diamond sword
+20 Max Health
--or--
Sweet poppy
+0.5 Speed
