This thread will hopefully answer all of your map making questions. I want to help make map making easy and fun for both beginner and expert map makers. This thread is still being added to, much, much more will be added in the future. I want to include all kinds of tutorials for every possible map making technique. Eventually I may add video tutorials as well.
Please feel free to ask questions (this will help me know what tutorials are needed the most.) Also please comment on what tutorials you would like me to have here. I conciser all suggestions, so please feel free to suggest ideas.

How to do it: Change the "count tag" using NBTEdit or MCEdit filters to -1.
How it works: Every time an item is dispensed from the dispenser it will subtract 1 from the item count until it reaches -127, then (this is where it gets weird) when the next item is dispensed the item count changes from -127 to +127. Now whenever an item is dispensed it subtracts 1 from the count, but it does not stop at 0 it continues on to -127 again. So the items are technically infinite. But if you log-out while the item count is above 0 then the next time you log-in it will break the sequence and continue to subtract 1 from the count until it reaches 0, then the item is empty. So it is only infinite if you do not log-out while the item count is a positive number.
How to do it: Using an external editing tool (MCEdit filters, or NBTEdit) add two potion effects to a splash potion. Add Instant health, and instant damage to the same splash potion. This makes a kill all splash potion that will damage both normal and undead mobs.
How it works: Zombies are undead mobs, so they lose health when hit by a splash potion of healing. Cows are normal mobs, so they lose health when hit by a splash potion of harming. If you add both of these potion effects to the same potion then it will cause damage to the mobs regardless of type. I believe this is because the game applies the negative effects before it applies the positive ones.

Thanks. I will fix that mistake, the problem is that every time I edit the post the editor removes all of my enters (the time I push enter to add space between lines of text), I must have missed one. Thanks for pointing it out.

Thank you. If you want to have a negative number of items, then you need to change the nbt data of the dropper/dispenser giving the items. You can do this with an MCEdit filter called nbteditor, download it here: http://elemanser.com/filters.html (you will also need MCEdit). When you run the filter on the dropper/dispenser that has the shop item change the "Count" tag to -1. I don't know if it still works in 1.8, there are lots of changes that happened in 1.8.
