Within the Minecraft.jar file, there is a folder called "lang". It is short for language. All the languages have a file with two letters at the end representing a language name. Canadian English is "en_CA", American English is "en_US", etc. You need a proper text editor to open it, though. I don't know if notepad works, but notepad++ works if you find that notepad doesn't.
