Villagers are so stupid. Not only that, Iron Golems barely spawn (at least should spawn for every village). I'm also annoyed that they won't climb ladders or open fence gates. Those two blocks are part of natural villages, but Villagers can't use them. It's odd. I wish Villagers also bred more often. I also wish each Villager had different eye colour and names above their heads so that each one was unique and could be distinguished. I also reckon villages should spawn with beds in the houses and then the Villagers would use the beds. Houses also need more torches.
I could go on forever! Villages and Villagers in my opinion need some serious work!
You must not pay much attention to their behaviors if you think they need to be more realistic.. lol.. seriously. Try breeding them but only start with 2 ...
Watch their behavior and their mannerisms towards you and each other
Watch the children they soon have go play and watch them group as a family just before sunset.
They are already "so real acting it's downright scary"...
They don't need to be any "more" real lol..
I made a map back in 1.4 that pretty much proves all of this if you pay attention.
It wasn't intended for a mass overload of NPC's but rather to show how they behave.
(Though if you let it go for about 3 hours in Peaceful Mode it'll explode into a Testificate Empire on 2 floors, complete with troops of Iron Golems all on it's own, you need do nothing but observe.)
I named it accordingly and it's only been re-uploaded for download to here, for about 2 weeks.
I made another one in the sky back then too but it was a total flop because the Testificates would fall through the floor. It was sort of sinister in a way because this "rain of npc's" helped to balance the population up there in such a way that they would never stop breeding.. lol -

The villagers do need some serious attention... I'd even vote for making the next update be solely about the villagers, their AI, the mechanics revolving around the actual village buildings and resources, and how they interact with these things. I’d also go as far as believing that the villages should interact between one another. Why not, right?
Ideally, I’d love to see things such as trade routes, village-to-village skirmishes, creation of capitals, etc. It would be amazing if they could make villagers encompass specific professions and see those villagers work day-to-day in their professions (i.e. - miners, lumberjacks, farmers, herders, traders, etc.) The villages served their purpose for the sake of being an introductory type of Minecraft addition, but the game is gaining maturity now and it’s time to begin seeing that level of maturity with the villages and villagers.
Just think about how awesome it would be to see the occasional caravan of villagers conduct trades along some path somewhere… It would be even cooler to see them strike camps with little campfires, etc. at night while on their travels. To make something like this really stand out, you’d want to see villagers from neighboring communities have different colored clothing (for distinction).
Yes, lots of room for improvement where the villagers are concerned. Not knocking what we have necessarily, but I’m just saying that if this were to be done right, an upgrade of the villagers could really make this game step out into another level of gameplay.
Actually, I would like baby villagers to remember who their parents are, and that houses are full after a while. Also, two villagers in one house should 'partner' and stick together more and they will produce baby villagers instead of just roaming around aimlessly and mating with the nearest villager that has an urge.
Noses are fine imho.

Obviously there are a lot of people who think so, because there are several very popular mods that do just that (Millenaire and Minecraft comes Alive off the top of my head; there are others as well.)

Geographicraft (formerly Climate Control) - Control climate, ocean, and land sizes; stop chunk walls; put modded biomes into Default worlds, and more!
RTG plus - All the beautiful terrain of RTG, plus varied and beautiful trees and forests.
I'd honestly rather have true villages. Ones that can expand and develop by themselves while also affecting the land around the village as if they were gathering resources, but that's just my opinion.
I kind of wish that there were two types, male and female, and you needed both to breed new villagers. I actually think it should be this way with all breedable mobs.
Having an update solely on villages (unless it's small) wouldn't really make sense.
I really don't think Minecraft is the type of game that would have something as complicated as what you're proposing. The time and resources taken into coding this would probably be a lot. Is that really what Mojang should be focusing on? The game is a sandbox so having NPCs going all around doing things and expanding in the world and changing it doesn't really sound like a sandbox to me.
Also, wouldn't all these complicated things make the game lag a lot and require lots of memory and such? Minecraft isn't quite optimized for things like that imo.
If you want more complicated villages use mods.
If you want more complicated looking villagers use resource packs.
Most specifically, I wish they bred so that there would be more than .35 villagers per house(door, actually, but still).
like huge
