I agree with you OP, I always just kinda assumed they were plants. Also, it's minecraft, not real life or even a simulation of earth. So why couldn't there be homicidal exploding plants on another virtual planet?

I do remember a old post, that discussed the anatomy and mechanics of the creeper. I can't find the topic, but the general idea was that:
Creepers blow up to spread their seeds (or speculated spores). Reason? Evolutionary mechanisms don't apply, when it hinders the survival of species (or something among those lines). Therefore, exploding is a mechanism for their species survival/ reproduction.
Second idea was HOW they do it. The post was in very scientific detail, but the general idea, that Creepers use nitrogen, which plants are rich of and they thrive off it. Nitrogen by itself isn't explosive, but in certain chemical bonds they can make explosive components. In fact, Nitrogen is a part of many explosive compounds. In fact, TNT we know contains nitrogen, as its name is: TriNitroToluene.
Creepers use moonlight power (like solar photosynthesis, only lunar) to create part of the explosive compound, which gives them their explosive power! And the rustling you hear before they explode? It's nitrogen gas (or the explosive components) rushing through their leaf'y veins, to its proper triggering parts within it's body.
This is rather vague and probably not exact, but it was the basic idea. The original post of this idea was very detailed and scientific.

venus fly traps use a water mechanism at the base of their leaves to snap shut on prey, creepers probably use a smiliar tactic to walk but with nitrogen like in Deathwiller's explanation of how creepers work
If this may help. Creepers may be moss monsters. Otherwise known as Peat. When the moss reaches maturity, it grows a bulb that fills with air. Eventually, it explodes to spread the seeds. I have proof that creepers are like plants not those stupid aliens people keep trying to draw when to compare. Firstly creepers texture closest resembles leaves and also that green is pretty planty. Secondly the creepers ability to explode comes from many plants that do explode to disperse their seeds to keep their plants growing, these plants will do this when near someone or an animal. Thirdly the name creeper is used for many plans like vines that creep their way onto things, like fences. And also for the extras of being alive and moving well, that could be from some kind of mutation, but the last thing the creeper is like, is an alien like people keep portraying it. This theory would also explain the reason why they stick around when it's day; if you have houseplants, or have in the past, you'll be familiar with the phenomenon in which the plant will gradually start to lean towards the closest window, trying to go where the sunlight is, even if other lights are on inside. Same thing would apply to creepers, because they get their distinct color from the plants that cover their bodies.
As for their habit of exploding, I think that it's both a defense mechanism, and method of reproduction, called "explosive dehiscence" in botany. By definition, explosive dehiscence is a method of seed dispersal in which the seeds are forcefully ejected from the fruit by means of internal tension. Examples of plants that use explosive dehiscence to reproduce include Impatiens, Sphagnum (peat moss), and Hura Crepitans, or "Sandbox tree". And another name for the Sandbox tree is the "Dynamite Tree", because of the loud sound produced by its fruits when they split apart.
The reason creepers reproduce this way is because they lack the organs needed to reproduce by animal means (however, they do have animal genitals, obviously, or else they wouldn't lay eggs). So they self-destruct as a way to release the eggs that develop inside them, which both creates a nest for the eggs, and ward off predators, the explosion being a warning sign that they shouldn't be messed with.
