Ok, so I have been playing this game since 1.5.2, and I used to love it. Played on servers, with friends, with mods, vanilla, started to build maps, stuff like that, and I again, loved it.
I am back from a 5 month break and, it's just not fun to me now. I love the game and want it to be fun, but nothing in it is fun to me anymore. I went on the first server I ever used, nobody is there that I know now, it's a lot worse than it used to be and it made me tear up a little bit that I will never get the amazing feeling of minecraft that I had on a server or singleplayer again. Every server is basically the same old factions or minigames and stuff like that now, and it's just boring to me but I love the game!
I need help getting back into it, but I just can't find a way, I tried everything. I am glad that I am no longer addicted to it but I still want to enjoy this amazing game. This is also just gaming in general, now I am more interested in real life stuff like paleontology, which is good, but I still want to enjoy gaming.
You could try some of the dino mods like Jurasicraft or Fossils and Archeology Revival maybe, or any lucky block map is generally pretty fun.

"If you don't understand the bigger picture, writitng a program is difficult. That's true with any computer programming language, not just java. If you're typing code without knowing what it's about, and the code doesn't do exactly what you want it to do, then your just plain stuck." - Dr Burd

There is a space-oriented server. There are lots of planets you can fly to, with resources and environments varying on each one. You do contracts to get money, such as delivering items to space stations or hunting down a pirate for their data core. You can make spaceships, starting off with the basic ones, and unlock upgrades for your spaceships. There are a lot more features too!
Now, I'm not sure if advertising this server for you is allowed... if not let me know and I'll delete this post. But here:
That has happened to me loads of times, I'll take a few months off and then come back and play for another 7-8. I'm actually just starting to get over a few months of "Minecraft Funk" where I haven't played (partially because I got laid off and am searching for more work) and I have no idea how long it will hold my attention this time. I'm guessing until the fall, when the big rush of games comes in and I can put my PC and PS4 to good use again.
To be honest with you if you are tired of it you are just tired of it, plain and simple. You can try and use different servers or mods, but if they don't bring the fun back it might be time to move on. Find some different games to play, and eventually you may get the itch to play the game again. Or you won't, in which case you'll be playing or doing something else and you won't miss it anyways. There are very few things in life that you won't get tired of at some point or another. You'll always have the enjoyment you got while you did play.

There's a lot of psychology and physiology that I could bring up here. Several really good educational YouTube videos, too. But you probably don't care right now, and I'll leave that research to your future, more intellectually curious self to discover on your own. The gist of it, though, is that when you first started playing, it was all new and exciting, then you made your first few major accomplishments, then you developed a sense of community and belonging. I don't know why you abandoned all that. Perhaps your parents or girlfriend were jealous of your happiness, and pretended to be concerned about you, to get you to go back to being as miserable as them. Or perhaps you just went on vacation. That isn't really relevant anyway. The point is, if you want to get back to the same place you were at, you have to pretend you were never there in the first place. Regain that same adventurous spirit. All your old friends don't play anymore? So what. They weren't your old friends when you first made friends with them. Look for new friends. Aspire to create new things. Don't be afraid to go out of your comfort zone and try something you haven't yet. There's a virtually endless list of ways you can play Minecraft.

I was in the same situation as you. Faction servers, prison servers, sky block servers... nothing really new. But this server is truly unique.
I will check that out! Hopefully the community is nice there, one of the main reasons I loved the first server, plus some unique things.
As for the other posts, thanks! One of my friends still plays but his pc broke a while ago, they are getting a new one soon, but I need some nice servers/things to entertain me until he gets back (maybe even show him the servers)
You can keep advice coming in case I bore of the other things suggested as well.
The only thing about this server is that you have to apply for player, and becoming one may take a few days. As a guest there are many things you can't do, but you can still build the basic ship, make a small base, do survival basics, gather resources, etc.

Feel the game, be the game and all will be fine. Trust me.
