I understand Cobblestone has many practical uses, and it's even a smart block to use sometimes, but would you consider Cobblestone a tacky or shoddy block to use in construction?
I sort of agree with you. cobble has good blast resistance, but it just doesn't look that great. i prefer my tree house and my dirt houses.

Cobblestone can look great if you use it right. Though I don't recommend making entire structures out of it. It'll feel too bland. I do like cobblestone's texture though (default or faithful 32 textures anyway).
Raw cobblestone is never my first choice, but there are times when nothing else looks right. It can look tacky if you make the entire building out of it, but... that's kind of almost always true. Look at Testificate villages, the reason they look so natural is because nothing is made entirely of one block type.

Let's say Vanilla. I understand that Texture Packs come into play, but most of your buildings(if seen at all by other players) will most commonly be seen in Vanilla.
Cobblestone is just basic. I get used to seeing it because it's what you start with. In fact, I don't think its tacky at all because it's what I expect most structures to be made out of. It's more to me like seeing stone castles and towers across the landscape. Sometimes it's also nice to mix it together with wood or other materials to make houses look like they're actually architected.
I haven't traditionally been a huge fan of cobblestone, but recently I've been warming up to it a bit. Still, structures built with cobblestone always look more 'basic' and 'low-tech' to me than structures built with stone brick or other materials.
I hate the look of cobblestone on the default texture pack. I very rarely use cobble as a building material unless the texture pack makes it look more appealing.
My point is: is it so easy to get that it's sloppy to use? Shouldn't you stretch for some baked stone? Even some Stone Brick? I just feel like cobblestone is a lazy block to use.
I still disagree. Cobblestone has a rough texture that smooth stone and stonebricks just can't match. It's only a lazy block if you ONLY use that block (like making a castle, and everything made of cobblestone). I'd find it more suitable for something like an NPC village. Now if all you build is cobblestone boxes, yes, that IS a lazy use of cobblestone.
With that said, I think that stone brick and cobblestone are good when combined with wood, any material looks lazy and sloppy if you make the whole building out of it.
I don't like cobblestone, it is too bland, because I use it so much for 3 day homes. I would rather use Stone Bricks, Stone, and Stone Slabs, because they have a smoother texture.

Churches are made of solid cobble (and glass panes) but their shape makes up for it.
In general, solid cobble usually looks bad, but when used with something else when building, it looks really good.

This is pretty much how I feel. I like Dokucraft's cobblestone, and I use it in almost all of my creations.

It has a very medieval texture to it, which I feel is great for medieval stylized buildings.
