Similar to tridents arrows have a lifetime, which determines when they will despawn, like arrows, when tridents reach 1200 life they desapwn. Meaning by modifying the tridents "life" using a repeating commandblock, you might be able to make tridents not despawn.
I suggest the following, running on a repeating command block:
/execute as @e[type=trident] run data modify entity @s {life:1}
Even though items despawn like tridents, items use an Age tag instead, and despawn after 6000 ticks.
/execute as @e[type=item] run data modify entity @s {Age:1}
