I am able to build any of these at the current time. Please post below and I'll get back to you within 12 hours. Thanks!
Here's a few server ideas I've been thinking about for a while. Feel free to use any of them if
you have a server. I'm willing to help build them if you'd like me to, because I'd like these to be implemented into Minecraft.
1. WWI--- Trench style warfare. Trenches are built beforehand. There's a no man's land in the middle between two trenches with cactus everywhere (barbed wire). TNT cannons maybe if you know how to build them. Mobs would be on, therefore you'd need some light in your trenches, but that could give away your position to the enemy. Instead of observation balloons, 1x1 towers would be allowed to try to spot the enemy garrison. Bows and arrows = guns. Instead of spawning arrows for both sides, only flint and feathers would be spawned. That way if a side is running out of ammo, they'd have to make an effort to get wood (sticks) to make more arrows (yay realism). For added fun, put all the resources (coal, iron, diamond, ect. in chests) in the middle of no man's land.
Made successfully!
2. Vietnam Done Right--- Jungle style warfare. US vs. Viet Cong. US has a base, virtually unlimited supplies, and many men. However, the base is obviously located (island or easy area to spot) so the VC know where it is. The VC has the advantage that the US doesn't know where they're attacking from. Their base has to be somewhere close, but it can simply be a hole in the ground with a ladder to bedrock if they want. VC gets limited supplies and must raid the US base if they want more. Lava = Agent Orange/Napalm. Bow and arrows = guns.
3. Urban Warfare (WWII/Modern)--- City is built beforehand. Not too big, but not some 10 building town. Skyscrapers are okay, if the builders want to attempt that. Pretty uniform streets, but make it look worn-down, like it's been bombed or something. Various abandoned shops scattered around with chests containing supplies (ammo/food/armor). Spawn point can be in the middle of the city that is heavily contested. Both sides can build forts in the streets to protect their land. Buildings can be protected with a plugin if you don't want them griefed, or not for added realism. Low supplies are given to both sides. Therefore, it's important for them to capture buildings in order to find the chests. Again, bows = guns. Swords can be used for up close fighting.
In all of these ideas, instead of giving manufactured materials (i.e. arrows and bread and armor) it could supplemented by using the basic materials (i.e. flint and wood and wheat and diamond) in order for the sides to have to make their own equipment for added realism. For WWI (both sides) and Americans in Vietnam: two to three mods would be there to either A. serve as referees to help both sides stay equal enough or B. join one side and have the ability to spawn certain items for their team. Mods would essentially be the home country work force, delivering goods to the soldiers at the front lines. They can also serve in the battles if they wish.
It's my opinion that the bow and arrow is not being used enough in Minecraft servers. Not only is it fun, but it takes great skill to use. This could lead to several veteran soldiers becoming marksmen/snipers for their team. In order to separate the teams, I'd recommend that one mod spawns diamond armor for their team and one mod spawns gold or iron. Even though this would put one side at a slight disadvantage, in war, one side usually does have a disadvantage. But, armor is optional. You could just memorize your team's avatars/names, like real soldiers do.
Edits (I will be editing this quite a bit while I think of new ideas):
4.The Spy---Fortress on an island close by spawn. Maybe a minute or so to swim to it. Dozen or so guards in the fortress. Chest somewhere secure with an object (possibly a book) in it. Guards could patrol the waters in boats if they want. The spy or spies' objective is to infiltrate the fortress, locate the chest, extract the book, find a way out, and get to shore without being detected. VARIATION: Much larger scale. Several fortresses, all on islands, each representing a different team. Each team has spies. Objective is the same except you need to get three or four books to win. So, pretty much like hardcore subterfuge capture the flag.
5. Escaped Prisoner---One person starts 100 blocks away from everyone else (about 10 people maybe). The others are called the guards/hunters/whatever and are given weapons, food, and wolves at the start. The escapee is given nothing. The escapee must run away from the guards and escape detection by using his 100 block distance to his advantage. It may be beneficial to run through forests/swim/go into caves in order to escape detection. The guards should fan out and search for the prisoner as best they can. If the escapee can survive for two Minecraft days (game starts at dawn) then he wins. Then a new person can act as the escapee and attempt to hide. This could be done on any server, and probably is best to do on one with natural features.
6. Paintball---This can be done in any server. Make a course of fairly small dimensions in a valley or flat land somewhere. Fence it in. Add 1x3 or 2x2 or 3x2 pillars scattered around. Use colored wool so it looks cool. Then get two teams of maybe 5 each and have them start at opposite ends of the course. Each side gets a small amount (maybe 20) arrows. The goal is to kill all of the other team. You can't dig or build, but you can pick up the enemies' missed arrows that you find. Whichever team has the last player alive wins. Spectators could watch, too, from stands you could make by the course.
7. Gladiator---This can be done in any server, again. Just make an arena, preferably in a Roman style. Make the bottom sand, because that was typically found in arenas. Add seats around so people can come in and watch. Try to make the fights as organized as possible. Have set times when two fighters will battle. Make the opponents have different armor/weapons so that it isn't just two guys stabbing each other while jumping around. For example, give one guy no armor, 10 arrows, and a bow; give the other guy armor and an iron sword. That way, it mixes up the competition and makes it more interesting. For added fun, have an admin spawn a few mobs. Spiders and Zombies would probably be the best to fight against. You could do team fighting against mobs, or do team fighting against players. Also, you could add bets. Let players bet diamonds on who will win the fight. For example, Al says Bob will win so he bets 5 diamonds on him. If Bob wins, Al gets 10 diamonds or so. Make sure the winner of the competition also gets a small prize, so that there's a reason for fighting.
8. Prison Done Right---I tried this before, and it was fun for a few hours. Ultimately, inactivity of the owner and miscommunication led to its downfall. If I could just do this right, I know it would last long and be awesome. Anyway, here's the thread: http://www.minecraftforum.net/topic/467646-prison-server-done-right/
9. Connect Four---Make a giant connect four holder. It should be easy to figure out how to do it. Make stairs or a ladder to the top so players can drop blocks. Use gravel and sand since they fall. Enjoy.
Built it myself successfully in about ten minutes!
10. Special Forces--- This is pretty much like a clan attacking a base, but a lot cooler. This can be done in an established server, or it could just be a fun game. Basically, this is how I picture it: the "enemy" has a base on a high mountain on an island, so it's easy to protect. There's houses, campfires, and all that good stuff. Unfortunately, the enemy has state secrets, so it's up to the special forces team to neutralize the enemy. The special forces start on a nearby beach with a stack of ladders, boats, leather armor, four diamonds swords, four bows, 100 arrows, some redstone, a couple TNTs and a couple porks for each man. The special forces should have between 3 and 5 people while the enemy should have around 10 at least. The enemy will be instructed to mine and farm on their mountain base. On an undisclosed night, the special forces will sneak aboard their boats, sail out to the mountain, use their ladders, climb to the top, neutralize the guards by sniping or by close combat, and then must set a TNT charge in the base. After setting it off, the special forces must be able to safely make it back to the beach. They lose if any of their members die. The enemy loses if the TNT charges explode.
11. Scout--- Very loose idea. Basically the goal is to see how well one can use the environment, time, and survival skills to make it to civilization. First, a group of people or a server owner makes a town around 1000 blocks x and 1000 blocks z of spawn. (I've tested and 1000 blocks diagonally is very hard to cross in a day). Make it look nice, or just do a single building, up to you, but a nice looking town would be a good reward. Basically, it's the scout's job to go from spawn to the town without dying. The scout is given the coordinates to within 100. For example, if the town was x 980 z -1200, then they would give him the coordinates of x 1050 and z -1300 just to throw him off a bit. This is so he actually has to search for it instead of only relying on coordinates. Also, the owner can leave trails (badly chopped trees, running water, cobblestone, unnatural landscape, ect.) to help the scout reach the destination. This could be timed so that the fastest scout to reach town wins a prize, or you could just do it with your friends as a challenge.
13. Medieval Zombie Onslaught---Cooperative team vs. environment. This would be suited for a separate, dedicated server. A castle is built ahead of time. It should not be big; 30 by 30 would probably be good with walls only 4-5 blocks high. Plugins would make the zombies:
A. Be faster, have more health, and do more damage
B. Spawn at a rate perhaps quadruple normal
C. Be limited to about 100 at a time so as to prevent lag
D. Have a larger line of sight so as to follow players at a greater distance
Plugins would also prevent other mobs from spawning. Instead of the typical mod that makes zombies able to break blocks, the theme of the server would be the danger of getting materials. Players would have to cover each a man while he goes to collect wood or water or seeds. You could try to reduce the enemy zombies by sniping them from the walls before rushing out for supplies.
What's that? Not enough? Too easy? Well, here's the catch: throw in a second or even third castle group. Each castle will be within sight of the others. You can sabotage enemy castles by opening up holes for the zombies or steal from your rivals. Be the last group standing in an anarchy wasteland.
If you like any of my ideas, please, give a bump, so we can get this happening. If you have a server and are interested in working with me on this, please either post or pm me. I have had pretty bad experiences with immature owners, so if you would like to work with me, please be mature and easy to talk to. I have tons of ideas like this, and I will keep updating this thread regularly, if people would like me to do so. I just want Minecraft to get away from this cliche medieval towny stuff and have some variety.
The urban warfare idea in particular sounds like it would be a lot of fun. Sniping from the inside of buildings, setting and avoiding traps at natural choke points, scattered supply sources... it would make for a great variation on the basic combat mechanisms and force players to use more strategy than Minecraft combat typically involves.

Both of the new ones sound pretty fun too. Seems like you could even run #5 as kind of a side game on an established server without needing a server dedicated specifically to that kind of gameplay; might try it out once I get my own server up and running.

Yep, I thought that, too. Awesome, I'd help you build it and stuff if you get it up.
Made a paintball course in a server I"m in. We're going to use snowballs though, since we can't spawn arrows. It only took me two Minecraft days to build.

I looked it up, but I really just want to stick with Minecraft.

Awesome! Glad it worked. Are you using arrows and how big did you make it?
Cool, maybe I could come check it out sometime?
I wish I was in this :C
