1.6.4 Minecraft maxed out - 300+ FPS
1.7 prerelease Maxed out almost 30-80 FPS
Playable but not the same feeling, and yeah they human eye can't see more than 30 but still the difference is really noticeable.
They added features like mipmap and anisotropic filtering in 1.7, so comparing max settings isn't fair if you include those.

(OT) This is wrong. The human eye can see much more than 30FPS. Beginning with about 24FPS we get a sense of motion, that's where the "magic number" comes from. Your vision is not bound to FPS, you will see a lot of difference between 30FPS and 60FPS.
The SOUNDS.JSON system has a bug. If you add more than one entry to the title music category you will get multiple music files playing on top of eachother on the title screen. One starts then a few seconds later another one starts on top of it. I've reported this bug. Can anybody else confirm this? It seems to stop after a couple of tracks have already played, though.
Your monitor limits the FPS to 60, all other frames will just waste computing power.
yeah visually you won't see more than your monitor allows via the refresh rate, but Minecraft is an odd beast that feels a whole lot smoother (ie mouse control) with framerates north of 60.
