I believe that it is a currency/barter thing. As in, rubies are not the official currency, but are a widely accepted trading good. Also, I think he got the redstone be trading with the villagers, as well as the swords. They are all undamaged and perfect stacks. I therefore assume that he was trading for them.
[Edit] Also, you will not have to go searching for Rubies, as you can trade the villagers for them.
I wonder if they'll trade for cobblestone? I have warehouses full of chests of the stuff, and even at an exchange rate of 32cobble=1coin, I'd take it.
There's a question for you: Assuming exchange rates of 1raw chicken--> 1 coin, how would you estimate more valuable items/blocks to cost? Or rather, how much would you be willing to pay/spend?
I would personally prefer if the "Currency" wasn't craftable and definitely NOT redstone based, I like the idea of either it's only obtained by selling things or it IS rubys of some sort.
Why is everyone complaining they want pigmen? I find pigmen as gross little naken men... v.v Since when in real life do you go to a town and find naked pig people running everywhere... If you want them so bad just retexture the villagers to look like naked little pigmen things... And FYI they already have pigmen. Except theyre half zombie, which again you can retexture to look completely like a pigman.
This is awesome!
Finally there is a good reason for them besides stealing their resources. ;P

YES! Jeb finally added Rubies to Minecraft, a feature I've been waiting for forever! He said he'd add a new ore (but only if there was a purpose for it) and I guess he made Rubies currency! And if you look at the picture closer, they aren't Redstone-made rubies. The player has a Potion Stand and there are various Pistons around the villager trap. If anything, the Redstone was used for them.
Woohoo Rubies! Does this mean we get Ruby Armor now?! :-D

It makes the game way too easy, I think. Of course, my opinion would change if there would be items you can only obtain by trading.
I'm curious what information you have that we do not. Nowhere did I see in the screenshots or posts that this would make anything significantly easier.
I believe you think you'll be able to bring 64 cobble to the villager and trade it for a sticky piston or something. I doubt it. I think they will only buy certain things, and only sell certain things. So you can get leather armor without killing two dozen cows. That's not gonna break the game.

... gold is used to make golden apples and golden melons thingy. And normal stuff like Armor tools. Its enough for it.
