The most obvious is the extremely laggy terrain generation, especially when flying or sprinting
Villages tend to be difficult to get around, as the gravel roads sometimes block doors or are too far below them
Abandoned mine shafts are extremely common, and nearly always cut into a ravine (who would build that stuff in mid-air in a ravine)
It still lags when loading map (exploring stuff thats already generated)
Mountain biomes are a bit over the top
When you drop items (usually from a workbench) there seems to be a ghost item that creates an item in your inventory which is difficult to remove
Items you pick up in creative may go into your inventory, but not your hotbar; this can only be accessed by using a workbench, furnace, chest or dispenser
Edit: In the Nether, random faces of netherrack are golored brown instead of red
Edit: You can punch mobs with a very long range in creative mode (& ghast fireballs)
Edit: Your creative inventory resets when you change dimension
Edit: You can break Bedrock on creative
A few possible causes of the constant lag/loading map lag:
Particles in water (cool, but not neccacary)
Torches change the light they create constantly (but ever so slightly, watch and you should see)
Way too much wild grass (it does hide mobs well though, especially spiders)
A few other notes:
Furnaces don't crash for me, at least for cooking steak
Trees in swamps do generate in the water, it looks cool
You don't have mossy or cracked stone bricks (and more) in the creative inventory
You can spawn in very unfriendly places (a treeless island in the middle of a ocean)
You can control the sun with f6 and f7 in survival
Ender pearls are useless
Vines can't be placed in all the ways that they can grow in
Zombie meat (sry, forgot the name) 'poisons' your food bar, recovers after or or sometimes when eating another one
Cave spiders are extremely difficult because they poison your health
Rumor has it that only one stronghold generates per world (possibly in the farlands.....)
Silverfish come out of mined smooth stone, usually around strongholds
Yay, Squid can actually swim
Initiating flying while sprinting further increases the field of view, but returns to normal flying when the sprinting would run out Torch light(and i think lava, lava may have been orange) is way too white, it sometimes looks a bit blue (in contrast to surroundings), and redstone light isn't red enough (both torches and repeaters)
Edit: All lighting is identical (except night/day) unless you're counting the varying brightness. At high light levels, it's a white or even slightly blue color, and at low light levels, it has the cool orange/red glow (that everyone seems to like)
And some good points:
Right mouse button blocks with swords, each hit deals 2 durability points to the sword and slightly less damage to you
Double jump both initiates and stops you from flying (not at the same time), also landing stops you The furnace has an awesome orange glow
Edit: Bedrock emits particles from exposed faces
If anything here is incorrect, let me know and I'll fix it, and I may add other things to this list
Also, I'm avoiding stating the obvious, so I probably have missed a lot.
After a large amount of exploring to find a nice place to build my PVP map for me and my friends i noticed a severe lack of a few things. Many expansive biomes lack trees and grass. I noticed the world felt oddly empty and couldnt figure out why, Then after looking around for hours it struck me that the only places with trees were the gigantic forests. The other thing i noticed was that i havnt seen a single snow biome. Im not sure if these are bugs, But im really hoping they are. Mountain ranges arent as cool without tons of trees.
It's Laggy in Creative Mode when flying, sprinting if you have any View Distance Set, some tree bugs, white boxes hanging from it, makes it even laggier.
All of my existing worlds defaulted as Survival. I HIGHLY recommend adding a button somewhere that lets you switch from Survival to Creative and vice versa, because I want the ability to fly in some of my existing worlds where I am building things.
Flying and pressing Shift for a small time, without stopping flying, will make all hits critical.
Exp. Orbs drop from Mobs.
Hitting doors/switches will destroy them.
Noclip works oddly (possibly because it's a modified Sprint Mode). There should be a button to able/disable it instead of double-jump and touching the ground.

My Server: No Plugins, Snapshot Server with an interesting respawn gimmick
