This thread has been very interesting to read. There are a few points I want to clarify.
Making it more common would make trading too easy, which would get lots of hate (we have people saying that trading is too easy as it is, even without the ore.) In all of my 12w21a/b time, I didn't find one single emerald (although my main world is a few islands in a Large Biomes ocean, so I probably wouldn't have encountered too many Large Mountains.)
Also, jeb said that:

The "Emeralds are only currency" line is the only one that says that emerald blocks could possibly be removed. As it looks, I don't think that's what it's implying.
I guess I wasn't exactly clear. Hard to put sarcasm into my words on the internet. My point is instead of making it more common Jeb removed the ore completely. My whole argument here today was based on this exact issue. So removing the ore was the best option here. Removing the ore allows for people to not worry about finding the ore. Now people can try out the trading system instead of searching endlessly for the ore. Looking for the ore would not be worth it for me as it would be so much easier to trade. The only reason why people are mad IMO is because they wanted a new ore. They screwed it up. So I think we can expect villages to be a little more common because I'm sure that's the next thing people will complain about.
No I think it was only the ore blocks that are going to be removed. And I think they're still going to be able to be accessed in creative mode. Not like you could get a sizable amount of emeralds without creative mode or lots of trading... But new mobs would be nice. Tree mobs, birds, WHATEVER!

Yeah, I want them to be implemented into the game. Or at least use the "Bird Screaming" loop thing, or the rest of the ambient sounds, that sounds awesome.

Cocoa Beans frow on jungle trees.
Cocoa Beans drop from jungle tree leaves.
Large Biomes world type.
The Ender Chest.
Emerald.
Villager Trading.
Villages have different blocks used to make them in different biomes.
Pyramids.
Sandstone Stairs.
The new Golden Apple.
Boats pass through lily pads without breaking.
Passive mobs can be pushed around more easily.
And there's most likely another snapshot coming this week, so who knows what it will add.
You forgot the lovely new gravel texture, and the fact that lava and water can be used in dispensers, as well as boats and minecarts.
You will now be able to move minecarts along slowly just by sitting in them- much more useful than getting out of it to push it to a booster rail, only to have it speed off into the sunset.

The only confusion he should be miffed with, is the confusion they create by not having a proper PR department.
"I am gonna remove the emerald ore, but I am going to add blocks you build with emerald ore... Oh and remember, emeralds are just currency!"
