Have them... Build stuff! Dig random 2*1 tunnels! ENDER(HERO)BRINE!! That would be freaky, but how to keep them from Ender-griefing your stuff... it may not be a good idea. Well, building stuff may not be too harmful to your structures and maybe they could only dig tunnels through dirt. But they definitely do need to be a lot more difficult!
1. When they initially go hostile have them teleport to the player and drop TNT in front of them then teleport far enough away to take little or no damage from the blast.
2. When they touch the player the both teleport to an area within the sight of other hostile mobs or the endermen teleport hostile mobs to the player
3. They can only be killed by certain types of items or elements. e.g. they can only be killed by water so you have to either lure them into water or carry water with you.
I think there must be "pigmen" effect.When you look at one of the Endermans,they will all start to starring at you and then attack you.They must spawn not alone,3 Enderman i guees,water and light weakness should be removed,especially watrer weakness,more health,more damage,scary sounds,increased range,they should be faster then now and e.t.c.
Make the endermen more creepy. Let the staring thing be dangerous to the player, such as making him move closer tot the player when the player is not looking... or having the staring thing drain the player's strength. At the moment, endermen are too passive and easy to kill.
Make another mob that is deliberately cute and annoying like the creeper, but likes to re-arrange your stuff.
Maybe a pink, female creeper that likes to "redecorate" things by kicking bricks out of place around instead of blowing them up!
...after all, creepers have to breed somehow. How would they do it if they just suicide bomb all the time?
I like the walking on water. And what about making them how they WERE. they can move ALL blocks(not bedrock). I think it was awsome and really annoying!
If you want to make Endermen truly dangerous and scary, give them an affinity for the dark.
More specifically, make them have a slightly higher chance than normal to break torches behind the player when more than a few layers underground. I don't know about everyone's habits, but I use a trail of torches when I go spelunking (place torches on the left wall on the way down, then keep torches on your right to find the way out!) and having no idea which way to go because torches have been removed would send me into a panic and probably result in me getting lost and dying somewhere underground.
I've seen the idea for several variants and this could perhaps be one of those variants. If this ends up being the case, make this variant silent until activated by the player into aggressive mode. If the player is alerted that something is behind her it would make it easier to figure out what is going on.

It is amazing how opinions differ when it comes to the difficult of the Enderman. I think Enderman needs to buff in certain areas and nurffed in others. For example, I think they should have a swarm effect (just like the pigman in the nether), or they hit harder but spawn less frequently.
However, I do agree with Seth, in no way shape or form should they ever surpass creepers.
yes make them better i would do very haunting sounds and when u look at it and turn back it follows u were u go (not just teleporting to ramdom blocks)and can build and spawn a bit more i would say that would make enderman really creepy or enderman picking up creepers and blow up with them when near the player dont make them burn in sun thats just stupid too or when they have low heath then they can get any creeper to bomb the player but we need creepers approval :fine i can only do a attack that kills me too so ill just let enderman just pick me up and use me as a bomb
there annoying each morning i wake up theres 3 new holes in my castle and they bug to the holes so even if i repair the damage and kill that enderman another enderman after a couple of nights will come and take the same block again >.<
When I first got the hint they were coming out, i was expecting them to be quiet, whispering, blank staring mobs, pretty much unpredictable monsters that followed you even after you respawn stalking you and keeping you in fear. Rather then that, all they did was take blocks from my house, stand around like morons and open their mouths if you looked at them like a guy at a shopping mart after his family was killed. Truthfully if they are to collect blocks, they should build little hamlets, void of life by day, but populated at night, just for the odd chance you stumble in their land, and they get the slightest glimpse of you looking at them, they'll stalk you until their dead, without a hint they're around.
Very cool. Then there is hope. I suggest Notch watches this video. music sound effect, track down the dude who made this and ask to add this.
There needs to play music, and they need to have language than you dont understand, to make them mystic and spooky.

Minecraft (in its most basic form, I suppose), is a very quiet, almost eerily quiet game. There's no pounding theme music or jagged harsh sound effects, but rather the more "natural" sounds like passive animals, water, etc.
Adding the sort of otherworldly, staccato, hushed-gibberish sound to the Endermen, as heard in that video above, would make them really stand out from other mobs for the right reason, namely, their potential as a truly creepy, scary creature.
