Is that thing under the health bar an exp bar? I would have no idea how it would work in Minecraft (nor would I want one) but that was the first thing that came to my mind.

I think there's a better chance of the lower bar being experience than stamina. You don't really need to know what your stamina is if all that's being added is sprinting. It's also apparently empty, which if it was stamina, unless he had been running previously in both pictures, it would be full. If the only way to get experience is to fight aggressive mobs, then it would explain why it is empty.
Absence of the armor bar is understandable. I never used it anyway. The bars in the inventory let you have a better idea of how much durability is left in each individual piece anyway, rather than the whole set. The normal armor bar didn't let you know if a single piece was destroyed.
Every time they post pictures, the more and more excited I get. Then the more sad I get when I realize they're not releasing it until after PAX which is over a month away D:
That actually makes sense. There's no need for EXP for leveling, there's not enough mobs and none of them are all that dangerous either.
A good percentage of them are dangerous? You have cows, chickens, and sheep which are completely passive, then wolves and zombie pigmen which are aggressive when attacked, and zombies, skeletons, ghasts and creepers which are actively aggressive. Notch has also mentioned that there will be another aggressive mob added in 1.8.

The mutton bar can only mean one thing: Hunger or Food. This will probably come either in a unique mode(Realism, Hardcore, etc) or in all modes\standard in the game(which I personally would prefer :3). I assume it depletes over time, and you have to eat to refill it. When it reaches zero, you will probably start losing health points slowly, or just die instantly(speculation, obviously).
The 'mystery bar' can be Experience, Stamina or the new Armor bar. There's not much else it can actually be, at least in my eyes. It could be experience, seeing how information about 'exp orbs' was leaked earlier. It could be Stamina, seeing how Sprint is going to be implemented, and there should be some kind of visual indication to show you how much can you run. The problem with both of these, however, is - Where is the armor bar gone? Which is why I'm led to believe that it might actually simply be the new armor bar. The old armor bar was never quite accurate either way; Perhaps we will be able to tell how much armor we have left more precisely now.
