I don't think it can be left handed because there is no ui so he turned it off and when you do that you can't see what's in your hand. Probably some kind of pressure plate.
Actaully... no thats not it. I zoomed in 800% on that spot and noticed something. You see the area near the end of the chest is farther back and has a "crack" where you can see the ground behind it... or below it.
It's really this: Notch made it so you have a biulding material, or block, in your left hand so you have an extra hand to kill stuff with. As you build you can kill basically.
The courtroom verdict in my eyes is this. The evidence is just too hard to not mention.
Edit: I hope this clears things up. And i'm looking at the area between the block and the chest now. Yes there is a little area that disproves your experiment

I know what it is and this is 100% corrrect. Behind one of the cactuses is a chest. That chest is hidden treasure. Notch said he would add random chest generated and had random items, its like the ones in dungeons, but by itself.

There's also something behind a cactus that looks like a chest, i can't be sure. And last but not least, he's holding a block of sand in his LEFT hand, giving a hint for Dual Wielding, Maybe?

Also, i saw that he's adding brick and stone stairs as well. Don't call me stupid for that. it's in the classic item slider interface.
i think maybe in deserts you eventually hallucinate and start seeing things which is why there are so many strange things like what is behind that one cacti and that you left wield and the water spring randomly there in the desert.
While the first pic does show the new lighting, My guess is that the "second" thing (in that first pic) is not only that the chest opens (with the lock extending down) but that the lock itself is actually protrubing just like the new pig snouts.
