I'm sure Im not the only one when I say I've done a pretty good job on my survival world. But with new content being added in, I'm losing out big time. For example, I have explored every last inch of the nether. So I can not get nether quartz on my survival world, and I don't wish to use creative to get it. Just like jungle wood. I say villagers should be able to trade you items from updates. Its a sure fire way to get items into games post-update. And I'm sure many people would love this idea.
I agree with this idea for the Xbox 360 - where the world's are so limited in size and 4J's stated plan is to continue adding updates for awhile yet. There should be a means, other than creative, to access every block added to the game in any world through (either villager trading or the bonus chest).
Since its possible to reset the nether, maybe get items from the chest in the nether fortress?
Resetting the nether still doesn't cover all items that might be missing from a world. Only a small number of different blocks are available from nether chests.
PC players get to just expand the boundaries of their world to get new blocks whenever they are added, but Xbox 360 players can't do that. Also, I really don't see the harm in increasing the number of items villagers will trade for to include a chance for every possible block. They can make it so that the blocks currently not traded by villagers could be extremely expensive. Resetting the nether also has the disadvantage of undoing any build in the nether... don't really want to do that.

What if they add a console exclusive green robe villager, rare villager that trades items that older worlds might not have and/or items that might easily be exhausted: jungle sapling, quartz, clay, etc. ?

I don't think a "new" villager is needed. Priests can trade Nether quartz. Farmers can trade saplings. And blacksmiths can trade clay.
At the very least I think quartz should be offered through trade. The only way to get a decent supply is to reset the nether several times. It's actually preventing me from wanting to build in the nether incase I ever need more quartz.

It could be done by adding an exclusive villager or just by adding an exclusive trading level (i.e. a Level 7) to random villagers. That way, you wouldn't know if you've got a villager that will trade for the higher priced "missing" blocks until after you unlock Level 6 for that villager. In addition to opening up a chance to get "missing" blocks into old worlds, it would also be an incentive to keep more villagers alive until you at least opened up the Level 6 trades in order to see if you've also gotten a Level 7 trade available.
In addition to giving blocks missing from older "full biome" worlds, it would make games like Superflat Survival more viable (and fun) since you would have a chance to get to a higher level with a villager, for example, you wants things like coal for emeralds. Right now, in my Superflat Survival world, I have to kill off those villagers because I can't get ever get coal in a standard superflat world.

Can you just reset nether or does that screw up survival mode?
Regardless, I am always in for a variety of villager trading.
Perpetually negative
Must say, you are a lifesaver. But I still can't get the other items. But thank you, nether quartz here I come.

And that's not a fun way to play the game.
