Now I have many ideas here so bear (bare?) with me. They can be all linked together or each done sperately. Tell me which ones you like : )
1. Villager Settlers. Now I like playing Survival and having villagers about. I like building my castles and such and making them look busy by containing the villagers within. However, the villagers keep on dying or they just don't want to move to the nice new homes I built for them inside my castle walls. Im thinking some sort of special sign or something could be developed to spawn a villager within 1 minecraft day. Just 1 villager and maybe it would cost some emeralds or something but they would function like a regular villager. I just want my castles to be fully staffed with villager servants but its hard to do when there aren't any around. With this I could have many villagers running around, making my home look very active indeed.
2. Horde attack! This is an option that you could add. I thought up of this while watching some minecraft animations. Basically you can select up to 3 different types of horde attacks which would come at night. Small (6-7 enemies) Medium (11-12 enemies) and/or large (16-18 enemies).
This option basically makes it where a small army/squad of a random mob (led by a hero [ a slightly tougher version of whatever mob it is based off of]) will attack you. It brings a warlike aspect to the game. The hero stands in the back and lets his soldiers (Zombies/skeletons/etc) try and kill you. When you kill them you face off with the hero. Defeat him and you get a reward like emeralds/gold/diamonds/enchanted items/etc. Now the bigger the horde, the tougher the hero you will face. Difficulty settings make things even more challenging but provide greater rewards when you defeat the heroes.
You will know when the horde comes because the sun or moon will change color 10 minutes before the attack and a new music will begin to start playing, some sort of battle themed music. (or some text could appear)
3. Bodyguards and Taverns. First I will go over taverns. Its a new building in villages or just a random building out somewhere. Its basically an inn where henchmen gather. henchmen are NPCs that you can hire with emeralds or some other resource to travel with you (Think like your wolves) Only difference is that he/she can have armor and weapons equipped to them and they can be set to guard a specific area. Instead of being a limit on how many you can hire there will be a limit on how many can follow you at one time. Im putting that number at around 4-6 minions following you.
4. Village walls. This gets me frustrated when I am in a big village and a creeper walks in and blows everything up. You'd think that villagers would have erected even a small 2 block dirt wall around their town to protect them from the beasts of the night. Thats what should be done, small defenses put in place around towns to make them more of a safe haven.
5. The mason profession for a villager. I can't tell you how many times i've run out of stone bricks or wood when constructing my castle. Its a real hassle to go out in the middle of the night to gather the resources. With the mason profession I could trade a few emeralds and get some more materials to finish my castle with little to no hassle. Basically the mason will offer different building materials in exchange for emeralds. At a low rate like 2 emeralds = a stack of stone or something.

sounds like a bunch of ideas here. as far as the villagers in your castle or village goes. try capturing villager zombies and putting them in a single block area and cure them.
you will have to do sections though for this to work. quarantine the zombie villagers, cure them. let them roam into a breeding room with multiple exits. it is very tedious and time consuming. but it works. be careful not to leave the zombie villager before you start the cure process or it will despawn. but i cant see villagers just randomly spawning in a lit area or inside a castle even with a sign or you doing something specific. thats why we can cure villagers.
as far as your idea for the horde attack. it would have to be a mod or an option you select in the saved seed options. and the difficulty would have to be based on the overall difficulty of the game. plus we already have zombie sieges in villages on hard difficulty. no option for that.
i like your henchmen idea. but it would have to be limited for it to work. stupid villager with basic armor and weapons and you wouldnt be able to change these only pay for a better outfitted villager. and you could only tell him to follow you or guard an area and the stupid villager could attack any aggressive mob that enters the area besides creepers and zombies could still turn them.
i could possibly see a tavern in a village.
village walls would be a good addition.
overall good ideas but they will need to be dumbed down for them to work.
Borderline wishlisting here, make sure that the next thread you make contains only one idea, or a set of very closely related ideas. This suggestion is okay, but just know the rules.

No problem, but generally, if your ideas are segregate (in that they don not actually directly enhance, affect, or impact each other) then it is usually better to have separate threads so that each idea can be fully discussed and given the attention it deserves. but if segregating two (or more) ideas makes each other seem less useful (because they go together like redstone dust and redstone torches), in those instances, you would want to relate them together in a single thread as separating them would make the overall idea weaker overall.
As it is, most of your ideas can hold their own because do not rely on each other, each idea is separately viable and would be worthy of a separate thread for discussion to focus on each of them individually.

You can cure a zombie villager with a splash potion of weakness, and normal golden apple (Made from nuggets) I just want my castles to be fully staffed with villager servants but its hard to do when there aren't any around. The tavern idea is good, but for a bodyguard, I prefer to use a fishing rod to lug an iron golem around, or use a few wolves.

Thats what should be done, small defenses put in place around towns to make them more of a safe haven. If this were to be implemented, I would prefer that the boundaries would be cobblestone walls. But even so, they won't generate evenly on the terrain, and leave some gaps anyways.

With the mason profession I could trade a few emeralds and get some more materials to finish my castle with little to no hassle. Could spawn in the large village house. He could sell bricks, and woods like you said, it would be a good way to get some extra supplies (The brick is especially useful)

The only thing that catches my eye is the new profession, mason. That would be a lot more useful than the others.
invasion or seiges already happen when not on peaceful. Villagers can be made in a world without villages by curing zombies, and thus transported to where needed. Villagers do have breeding rules to grow their population within a limit.
I do admit the structure idea was ok, but not something I would be looking forward to. Walls on the other hand I would rather build myself, that way I could get what I want them to look like.
The mason mainly interests me due to fact it could be a way to get all that mossy stuff indefinitely, if not some of the other types that are not makeable through normal means. Also it is always nice to have another profession that would make sense.

i wouldnt consider easy mode to have enough zombies. therefore no real threat or seige. (my opinion though, i only play on hard difficulty.)
