Once the dragon is gone, what is left in the end to return to? Nothing but a barren wasteland, just a floating mass of endstone, punctured by a few obsidian towers and some enderman. There is nothing to return to. My idea is to transform the end into a peacefully (Or at least, semi-peaceful) realm for the player to reside in. (Please note that the end will only change when the player re-enters the end after defeating the dragon)
After you defeat the dragon and leave the end, it will regenerate, and turn into a collection of smaller floating islands. How these islands would look:
The main island: One large island would generate in the middle. It would be 1/10 the size of the current end island. It would be made of endstone, which would appear on the bottom, and would have dirt and bluegrass on the top. They would generate with small lakes of water, which could potentially flow of the islands edge. Two types of folliage would grow on the top. The first thing is a new type of tree, a bluespruce. The other type of folliage is a purple mushroom. The end fountain would be in the middle.
Small islands: Small islands would look similar to the large one. They would be anywhere from 10 to 25 blocks across, and would also be made out of endstone and bluegrass, with bluespruce trees and small mushrooms on the top. One of these islands would have the obsisdian platfrom for the player to arrive on.
Endstone islands: These islands would be around 30 blocks across, made out of endstone. On the top would be broken obsidian towers. Endstone islands are the only places endermen would spawn. 4 of these will generate, but only at the corners of the build area.
New blocks:
Bluegrass: These would be similar to regular grass, but would have a bluish hue to them. They would occasionally ommit small blue particles, which would deter enderman spawning and teleportation. Like mycelium, mushrooms could grow and spread regardless of light levels. Bluegrass could be picked up with silk touch.
Bluespruce: These would loon similar to regualr spruce trees, but would have a blue coloration to the logs and leaves. The planks would be a pale blue as well. They could be harvested and regrown the same as other trees.
Purple mushrooms: The purple mushrooms would behave the same of other mushrooms. They have a purple color. Huge mushrooms would be shaped similar to a huge brown mushroom, but would cruve slightly. Both the small mushroom and huge mushroom blocks will glow, emmiting the same amount of light as a Redstone torch.
Other changes: Water in the end would be light purple, and the sky color would lighten. Enderman would not teleport onto, or within 10 blocks of bluegrass. The dragon egg would be availible in the creative mode inventory. And finally, the main menu would now have an option to reset the end.

This is the one I have a problem with in particular. Enderman behavior in the Overworld is the same as it is in the End, I don't think their AI behavior pattern should change based on whether or not the Ender Dragon was defeated, and a player left and returned. They still have their allergy to water anyway, and will still leave you alone if you don't look directly at them.
But I do like the idea of transforming the End to some sort of floating island scene... I probably would have just used existing blocks to layer over what was already there mostly instead of coming up with new block types... I might have even suggested having the sun rise and set in a day night cycle, and clouds appear drifting near the floor (bottom) of the new realm. But that is just a personal taste for myself.
Instead of Endermen going totally docile, why not just allow different MOB's to spawn there providing more MOB variety overall?
I'll change up the post then. The docile enderman aren't really needed, especially with the bluegrass anyways.

The reason I suggested all of those new blocks and plants is because I don't want the new end to end up looking exactly like the overworld. As for the mobs, I think there should be a new type of animal. I was thinking about some kind of endercow, or a purple mooshroom, but those aren't very original.

A change to the dimension to this extent would be a pain to construct, but entirely possible. The idea of having the new blocks and such is a nice idea to diversify it. Maybe you could have some sort of stone sentinels that can spawn on the islands, they could be the new defenders of that realm that will leave you alone as long as you don't attack them. That's all that comes to mind when I heard 'Original peaceful mob'

Wouldn't be so bad if we at least had an option to reset The End like the Nether..... Or like I said in another thread.. have it be like every 100 minecraft nights you get a notification saying 'the dragon has returned' or something.

How about mini dragons on the 8 end islands? (They wouldn't drop an egg, only 10 levels of Xp) They stay on the middle platforms of the islands and won't go to attack you until you get into attack range. They could respawn every 100 nights.

I think the End should be turned more into some kind of Alien jungle of weirdness with lots of purple and various inverted-textures-made-to-look-better being it's main attributes, but that's just me.
As for mobs, I think some kind of small passive cat-like dragon would be an interesting addition, it would add some life to the end, especially if there could be sort of a flourishing ecosystem of purple particled void creatures, but still, they'd need a purpose. Maybe the dragons could be mounts you could use to get around the new end? That'd be an interesting use. And as for drops, maybe they could drop dragon scales that you could use in some sort of potion brewing.
And not to mention the fact that the Portal back to the Overworld should be re-located, not just on the spot where the Dragon is slain-- plus, once the End re-spawns as the "new end" you should have to go searching throughout the islands for the Dragon's egg, not get it right there on the spot. ALSO, the Dragon's Egg needs a use! I don't care if we only get an omelette out of it!
...although I would prefer a baby dragon.

And not to mention the fact that the Portal back to the Overworld should be re-located, not just on the spot where the Dragon is slain-- plus, once the End re-spawns as the "new end" you should have to go searching throughout the islands for the Dragon's egg, not get it right there on the spot. ALSO, the Dragon's Egg needs a use! I don't care if we only get an omelette out of it!
I wouldn't mind that. Just have the place where you actually fight the dragon be somewhere in the middle of that jungle. Have it be a fight to get there never mind when you get there....

Maybe we don't need a new animal. If you needed food, maybe you could eat the purple mushrooms, and they might give you a jump boost effect, or something
