I think it would be cool if they added mimics in strongholds and nether fortresses that come to life when you open randomly selected chests and attack you. When killed they would drop a random item that would have been in the chest.
This topic is vague. How much health does it have? What does it look like, move like, and sound like? How much damage does it deal?
Other wise, here are my thoughts: Its a fairly useless mob. Although I think I understand your thinking, you would want chests to be harder to get or more rewarding. But I would hate to have these things taking valuable loot out of chests, then only dropping one item. And even if you changed the mob, and made it drop everything it stole among death, then it would be even more useless. By the time you get to strongholds or mineshafts, you would already have good armor. You could blow right through this guy, making him not too much of a challenge. Sorry, but no support.
I don't think that the mimic is supposed to replace the existing chests in the game, or cause any of the existing chest to loose any of the 'loot' already in them, but rather as a MOB entity called the Mimic that is generated at world creation, or might even spawn near other MOB spawners, within the fortresses, inside houses, in abandoned mineshafts, etc. under the right conditions, and could spawn in pairs (for a double wide) and lay dormant until attacked or "opened", at which time it will attack.
I would expect that a chest would be a common drop for a mimic, and as other common, uncommon, or rare drops, items one might expect to find in a chest....
As to what it looks like... well, it looks like a chest... the purpose of the 'mimic' is to mimic something, and chests are common for them to mimic.
Movement? I expect once it is awake and aggro'd, it would hop around like a slime or a magma cube and have health and do damage similar to a Zombie to an Enderman.
I don't want to make up stats for them because that would be a developer's job. They would randomly spawn at world creation and be placed just like normal chests. The mimics could be difficult to kill and drop the exact contents of the chest it replaced. Maybe wolves would have the ability to sniff them out as well.
I read the topic wrong. For some reason, I thought that it was a mob that would spawn when you opened certain chests. They would take everything out, and then attack you. And when you killed it, it would only drop one of the items from the chest. My bad.
Now that I've re-read it, I've changed my mind about it. As long as it won't interfere with other monster spawns, or take up extra memory, then I support.
Another idea that might also be cool: When you open a chest, a monster pops out (Maybe it looks like a ghost), and you need to kill it to reclaim the chest items.

A boggart??? like from Harry Potter? Only I guess those weren't necessarily confined to closets, wardrobe and trunks... that's just where they were trapped for classroom exercises in the books/movies...
Nah, boggarts turned into whatever you feared. The ghosts would just appear in random loot chests. Although the boggart could be cool. Maybe the ghost could turn into whatever mob you killed the most whenever monster you killed the most of.
These replies keep giving me new ideas. What if when you open a chest that was part of world creation, there was a similar chance of it coming to life as there is for a pink sheep to spawn?
The best I can come up with is chests generated at world creation have a slim chance of coming to life and attacking you. When killed they will drop the contents of the chest they possessed including the chest itself. Think of it as breaking a chest that tried to kill you. Since they're made of wood, they would have a high armor value. You can test for mimics by hitting them with a sword/tool, shooting them with a bow, throwing potions at them, or having a wolf sniff them out.
I like the idea of being near death while clearing a stronghold, seeing a chest and hoping it has food, opening it, then it kills you!
Regardless of how its done, I too, think it would be interesting for there to be a risk of attack or death when you open a chest. Not just some Redstone trap and a trapped chest, I would prefer and actuall mob. I prefer the ghosts, personally.
How about, (I take you mean Mimic like in Dark Souls) instead of it being a hostile mob that attacks you. Why not have it so when you open the chest the Mimic will take the item in your hand and store it, and the only way to get that item back is with a Golden Axe. You would have to use a golden axe to get your stuff back, otherwise it would be like mining stone with your hands, you'll lose everything in the chest but still get experience. So you'll need to use a Golden Axe if you want your stuff and the other items that would be inside the chest.
When you open the chest there will be a pair of eyes on the underside of the lid (possibly like ender eyes) and when open will emit the same purple flakes like the nether portal.
Why would you want to be forced to use a specific item to get your things back? That's a terrible idea. That's something you would see in a mod (One of the many reasons I'm glad there's no modding on Xbox). Besides, there are much better uses for gold than making tools that break in 5 seconds.

Plus you'll have a reason for using a Golden tool
A. I'm not really fond of the idea that it actively steals what ever you are holding in your hand...especially if it was the stupid golden axe you had brought to get your stuff back in the first place that gets stolen.
B. I'm not really fond of the idea that you need a specific special tool to defeat it to get the stuff back that it stole from you. And i certainly don't like the idea that it would take a really long time to break it and get nothing back if you don't have the golden axe.
The ender-eyes under the lid and particle effects as it opens are ok... IF you would ever get to see them, since you are either breaking a chest that steals from you with a golden axe OR you are getting stolen from, the lid doesn't sound like it would be open that often to make those special effects worthwhile.
Personally, I like the "It lies dormant until you try to open it, then it attacks you" as originally suggested, I could see it as a double size chest, hopping around after you like a slime or a magma cube after you try to open it and "activate it", and when you do enough damage to it, it breaks into 2 single chests that continue to chase you until you escape or defeat them both.
Instead of de-spawning when you get far enough away, the chest(s) get saved back in a 'dormant' state until someone tries to open them again. While in a dormant state, they are immune to lava, and arrows (to be indistinguishable from a normal chest), but 'activate' when either opened or when a player tried to 'break' the chest (melee range).
