Typically... actually, (almost) exclusively... villages will only spawn in plains and in desert biomes. Since the xBox360 has a very limited world size, this means that slightly less that about half the time a village will even spawn in a random seed world.
Suggesting that at least on the xBox 360, there be other biome options for a village/villager spawns:
Swamp Villages (akin to Louisiana Bayou)
Jungle Villages
Arctic Villages
Island/Coastal/Fishing Villages (for maps that spawn with virtually no land except a few dots of islands here and there ... try seed= 4 if you want something truly challenging)
Hillside/Mountainside Villages
Valley/Ravine Villages
... or for the extreme fantasy, maybe:
Aquatic/Under Sea Villages (glass dome on bottom of ocean floor / Atlantis)
Underground Villages (Dwarf-esque)
Tree-Top Villages (Elf-esque)
Mycelium (Mushroom Biome) Village (Gnome-esque)

This, of course, opens the door to other Villager ethnicities as a possibility (darker skin, lighter skin, heavier clothes, beards, mythical, etc.)
Keep it to the flatter biomes, but yes, I wouldn't mind having a larger variety of village spawn areas, at least when the "desert villages" are added.
Jungle and hill ones would be a mess, though. I saw a PC modpack that allowed jungle villages...it looked terrible and half of the doors were inaccessible.

Additional logic would be needed to accommodate for tree/plant density or even uneven terrain, the current village spawn is a bit simplistic (I saw a village spawn over a chasm... I came into the village with villagers walking along paths and falling to their deaths; I've also seen a number of Village houses built over the Water with no 'path' for escape back to the mainland, or to the rest of the village).
However dense forests can be accommodated by using 'scattered hut' type building construction, Keep the 'hut' structure within a 5x5 blueprint (less corners, & 7x7 if counting roof eave). This would provide a 9 block interior (3x3), close quarters, but enough room for a bed at least. Logic to implement would be that the center of the 'hut' would have to be a minimum of 4 blocks from any tree trunk for placement (insure all trees outside the 7x7 build area). Any leaf blocks in the way would be replaced by the hut build.
To build on a hilly or mountainous region, this may require some additional build-out to create a flattish surface to place the Village. Simple Cobblestone could be used for this Underlayment, artificial Ledges, or Bridges as needed.
It isn't real complicated logic to achieve these results. (Actually, MOB Pathing AI is much more complicated by comparison)

I think that tundra villages would be cool. Tundra are flat and snowy, I don't think it would be too much of a problem t implement. The houses would be made of out cobblestone, but would have spruce wood logs and planks instead. They would also need to change village generation a little bit too. Torches would need to spawn at the end of the farms in the village, so that the water for the crops wouldn't melt

Eskimo village in the arctic, Aztec Village, etc. It'd be fun.
