I had an idea while playing today. My idea is having loot chests in places like caves, nether fortresses, and even under sand in the beach biomes. The way the chests in caves could work is because from my information, correct me if I am wrong, the world generates everything first and then it generates caves. In this case, where it generates a cave, it could generate a chest in it after the cave has been generated. What this will do is make cave exploring much more interesting.Obviously these chests would be rare though. The loot inside these chests should be lesser than the loot in mineshaft/stronghold chests.Things such as regular seeds, torches, coal, iron, and rarely gold or diamond. Perhaps also a few food items such as bread. Since these chests should have lesser stuff, the better stuff would be very rare such as gold or diamond. I think that the farther down the chest is in the world, the better the contents should be. Chests should spawn in places such as nether fortresses as well. The loot inside nether fortresses should be about that of the shaft chests. Some things that you might notice are that the nether can be reset allowing you to get infinite of the contents of a chest. A way to combat this is to make the contents of the chests random for the nether fortress chests upon generation of the nether, meaning it would not generate the same chest with the same contents over and over again. I don't know, just my two cents for today.
I would like chests in Nether Fortresses, but in caves... not really. We already have dungeons and strongholds which you can obtain items from chests in.

We also have them in mineshafts. quite a lot of them in fact. But in the Nether... I agree. Perhaps buried in the mountain of netherrack somewhere there's a chest or two with a full set of armor that all has level 30 enchantments.
Placement could be randomized.. and enchantments could also be randomized.
I mostly support the idea for having chests in Nether Fortresses. I barely go to the Nether because those Ghasts are a pain as soon as I enter. But if they added this I would go their more often.
More chests? There are chests in: (bonus chest) strong holds, abandoned mine, village, desert temple, jungle temple, mob spawners. That's an average of 20 chests per seed.

I do agree, but all of these chests USUALLY have bad items (except villages).
I found my first Desert Temple, I got happy, and all of the chests in their had rotten flesh and bones.
