They probably won't add them becuase its apparently next to impossible for anyone to type with things in with the X-box controller.
Pfft, this isn't like your typing a book. It's like a sign. And I manage just fine typing with the Xbox Controller. Sure, it's slow, but not impossible.
There has to be Anvils for renaming the mobs cause then there would no use of them.
Unless they went about it a different way, like when you are going to use it. That would pop up the keyboard thing, and you type and then name is over the mob, the item tag is subtracted from inventory. If were an item that you were going to rename, then I could understand using the anvil. That is just one way they could go about it.
I actually wouldn't mind seeing this in the game. Although I can see minor problems with it.
Overall no matter how they do go about it, it would be a limited space like having 1 line on a sign or something close to that.
