I really wish there would be a massive amount of mobs like real life...
amen, to that one! I'd love to see a more diverse ecosystem with a lot more mobs that are exclusive to certain biomes. None that have anything you need for core game functions, maybe just mobs that drop new food items of animal pelts you can hang on walls and place on floors kinda like paintings.
Also i totally forgot about that list of Mythical Minecraft creatures! Time to find that text file and get working on it again!
monkeys tamed with bananas from a new tree like palms
Oooh, I want palm trees so baaaad, too! Bananas would be the perfect drop from their leaf decay too! 4j, make it, make it, make it! lol! Seriously though, I really so want to see palm trees eventually. they'd fit in so well as the default tree that spawns on land in ocean Biomes (Most have a few small islands here and there!)
A mob that teleports, shoots arrows, steals blocks, climbs walls and explodes. And like Solomon Grundy, it never truly dies. Every time it's defeated it comes back stronger and harder to kill. The only way to kill it is to give it a red or yellow flower, which will mesmerize it, and then you can bop it on the head with something like a bucket or a mushroom. Not to mention it gets the email address that's linked to XBox Live and spams your inbox with car insurance, phone service and match making proposals (i.e. spam mail). If you have a phone number registered to your XBox Live account, it will call you at odd hours and tell you about its problems and/or try to sell you home owner's insurance even if you're 12. It would be the most frustrating mob ever, I tell you.
Solomon Grundy, born on a Monday. Christened on Tuesday, Married on Wednesday. Took ill on Thursday. Grew worse on Friday. Died on Saturday. Buried on Sunday. This is the end of Solomon Grundy.;)
-Bears
-Armored skeletons with swords
-zombie miners that drop ore or pickaxes in deep caves or mine shafts.
-More stuff in the water not hostile because i wouldn't want to get jumped or have to farm stuff underwater. just sounds like a pain.
Hawks should only drop fish if they just went hunting for it. =P Good luck killing birds though.
How about a Hostile Mutant Zombie Pigman that charges you with overgrown tusks?
Alligators, wraiths, maybe a drake once in a blue moon.
Maybe even Bandit NPCs, once we get villagers.
I just want a rare mob, something so rare it takes on mythical status but that actually is "in-game".
Spawn rate so low, that you would think it doesn't exist.... but when you do see it, you'd probably be better off running.

i was thinking lately that rather than just making new mobs it could also be fun to allow us to assign a skin to certain mobs. the Halloween skin pack had a lot of great skeletons and zombies that'd be fun replacements for the mobs in game and with villagers coming out it'd be fun to be able to make them use other skins as well, that way they don't lie around unused after you've paid for them.
4J could then put put skin packs for sale on the marketplace just for various mobs and animals to make them all appear different.
You could have a wolf skin pack that adds grey, white, brown colors to them or even turns them into, foxes, dogs, komodo dragons or something stranger even than that.
Cows could be turned into goats, or horses or maybe buffalo.
Pigs could become boars or pretty much any other animal hunted for its meat.
Chickens could finally be ducks! They may also become turkeys, geese, swans, or any small egg laying creature.
Dangerous mobs would be fun to toy with as well.
Zombies could become vampires or just even creepier zombies, perhaps they could be turned into herobrines or just any player skin.
Skeletons would be about the same, you could use any skin also applicable to yourself, perhaps even the awesome grim reaper from the Halloween pack.
Creepers could come in all shapes and sizes as they have very few animations, maybe robots, walking bombs, or just crazy recolored creepers.
Spiders could be turned into pretty much any short hostile creature you like maybe a pack to make them look like other species of spider.
cave spiders could become scorpions, snakes, black widows, or pretty much anything poisonous
The possibilities could be practically endless and make for some good residual income as the demand for mob skin packs and texture packs increases.

Was thinking you could add in Dragons that you could tame or fight and they'd drop like dragons teeth. (could be made into equipment stronger then Diamond.) If you tamed them they could kill things faster then wolfs, and you could ride them around, or you could fly on them around to get about faster in the survival mode. (wouldn't be as big as the enderdragon.) I saw some where something about the egg that spawns after you beat the enderdragon about hatching it! could be one of the places you could get it. maybe even be able to make something to incubate it and hatch. Also thought about making it so you could craft it, maybe out of obsidian?

This, was thinking Cockatrice sense they could maybe do something like they'd make you stop in your tracks if you look them in the face. (similar to how you look at a enderman agros him) could drop some cool stuff randomly for your effort on killing it, or feathers.

About this thought just now you would be frozen like 10 seconds and then the effect wares off for 5 seconds giving you time to turn and run. You could maybe take a potion so if you ran into it you would be immune to its stare, maybe even a new dimension to travel into? This is just some thoughts I've had so please reply thoughts or ideas to add to it. I wouldn't ever expect to see it in game though. OwO
Stereotypical aliens, that have a rare chance of spawning at night time. Obviously they'd be an aggressive mob. Also, have a UFO flying around as an indication somewhere in the map so you can know 'they' have arrived.
I also like the idea of a killer clown, but that seems too strange to have as a mob. Maybe a zombie killer clown that's fast and just looks scary, but of course would only pop up out of the blue to add a nice startling feeling.
Also, I like the idea of the balisk or cockatrice mentioned earlier. It should drop eyes, and you can then throw the eyes at other mobs to turn them to stone. You can then mine the stoned mobs and later place them, so now you have stone statues of wolves, pigs, creepers etc.
Like this Idea think it would be cool to have small, to scale mob statues.
